Description

This Creole chicken with rice is a comforting and tasty dish, perfect for autumn evenings or festive meals. I often prepare it for my friends and family, and it is always very appreciated. The chicken, simmered with tomatoes, onions, peppers and spices, is incredibly tender and fragrant. The raisins add a touch of sweetness that blends beautifully with the curry and thyme. It is a complete and balanced dish, easy to prepare and which can be adapted according to your tastes. Feel free to add other vegetables or spices to customize your recipe. A real delight!

Ingredients (14 ingredients)

  • 1 piece Farm chicken
  • 500 g Long grain rice
  • 6 piece Tomato(es)
  • 3 piece Onion(s)
  • 1 clove Garlic
  • 1 piece Green pepper(s)
  • 100 g Currant
  • 1 tablette Poultry broth
  • 1 c. à café Curry
  • 1 branche Thyme
  • 2 c. à soupe Oil
  • to taste Chervil
  • to taste Salt
  • to taste Pepper

Preparation of chicken and vegetables

Place the chicken in a large saucepan, cover with cold water, salt and add a crumbled poultry broth cube. Bring to a boil and simmer over low heat for 1 hour. Let cool then drain the chicken, debone it and cut its flesh into small cubes of 2 or 3 cm on each side. Immerse the tomatoes for 1 minute in boiling water, peel them, cut them into dice and seed them. Set aside.

Preparation of onions, garlic and pepper

Peel the onions and cut them in half. Put the onions in the Thermomix bowl and chop 3 Sek./Stufe 5. Peel the garlic clove and add it to the bowl. Chop 3 Sek./Stufe 7. Remove the stalk from the pepper, cut it in half, remove the seeds, cut it into dice. Set aside.

Cooking vegetables

Add the oil to the Thermomix bowl and sauté the onions and garlic 3 Min./120°C/Stufe 1. Add the diced peppers and continue cooking 2 Min./120°C/Stufe 1.

Simmering chicken

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the chicken cubes, diced tomatoes, curry and thyme to the Thermomix bowl. Salt and pepper. Simmer 10 Min./100°C/Stufe 1/Linkslauf.

Cooking the rice

Meanwhile, cook the rice in a saucepan of boiling salted water for 10 minutes. Drain the rice and set aside.

Service

Put the rice on the plates, spread the chicken preparation on top. Sprinkle with raisins and chopped chervil. Serve hot.
