  • 3.3 g Fresh yeast

Mix Poolish Ingredients

Put 150 g wheat flour T65, 150 g spelt flour 630, 30 g rye flour 1150, 330 g water and 3.3 g fresh yeast into the mixing bowl and stir until smooth.

Let Poolish Start

Let the poolish start for 2 hours at room temperature.

Chill Poolish

Put the poolish in the refrigerator at 5°C for 10 hours.

Mix Main Dough Ingredients

Put the poolish, 300 g wheat flour T65, 300 g spelt flour 630, 70 g rye flour 1150, 300 g water, 10 g fresh yeast, 20 g salt and 10 g baking malt (powder) in the mixing bowl.

Knead Main Dough

Knead all ingredients in the Thermomix until the dough comes away from the bowl. Add 5 g liquid baking malt (1 tsp).

Chill Main Dough

Put the dough in a dough tub or large bowl and refrigerate for 12 hours.

Acclimatize Dough

On the baking day, take the dough out of the refrigerator and let it acclimatize.

Shape Dough Pieces

Weigh the dough into 18 pieces of 93 g each and round them off. Then make the dough pieces a little long. Moisten the top with a brush and roll in sesame and poppy seeds.

Proof Dough Pieces

Place the dough pieces with the seed side down in the linen cloths. Maintain approx. 60 minutes proofing time.

Prepare Dough Pieces

Turn the dough pieces over, place on a perforated tray and cut with a baker's knife or razor blade. Carefully brush with water again.

Bake Rolls

Preheat the oven to 230-240°C. Bake the rolls for 18-21 minutes. Steam vigorously and release the steam after 10 minutes.
