Description

This poppy seed cake with streusel topping is a true classic that should not be missing from any coffee table. I have been baking it since my childhood and it always tastes delicious. The juicy poppy seed topping harmonizes perfectly with the crispy streusel. The addition of ground almonds gives the cake a particularly fine note. Add 100 ml of milk to the mixing bowl and heat for 2 min./37°C/speed 1.

Prepare Yeast Dough

Add 375 g flour, 75 g sugar, 1 pinch of salt, 75 g butter in flakes and 1 egg to the mixing bowl. Add the prepared yeast mixture and knead for 2 min./kneading stage to form a smooth dough.

Transfer the dough to a bowl, cover and let rise in a warm place for about 40 minutes.

Chop Candied Peel

Add 100 g of candied peel to the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Add 400 ml of milk, 1 pinch of salt and 150 g of butter to the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Add 500 g of poppy seeds and 200 g of sugar and stir for 10 sec./speed 3. Transfer the mixture to a bowl and let it swell for 10–15 minutes.

Add almonds, bitter almond oil, chopped candied peel, honey, starch, 3 eggs and 3 egg yolks to the poppy seed mixture and mix well. Let cool, stirring several times.

Prepare Streusel Topping

Add 300 g of flour, 150 g of sugar, vanilla sugar, 1 pinch of salt, baking powder, 1 egg and 150 g of butter in flakes to the mixing bowl and process to streusel for 30 sec./speed 4.

Add 3 egg whites to the mixing bowl, insert the butterfly and whisk until stiff for 3 min./speed 3.5.

Complete Poppy Seed Mixture

Carefully fold the beaten egg whites into the cooled poppy seed mixture.

Cover and Bake Cake

Roll out the yeast dough on a greased baking sheet and spread with the poppy seed mixture. Sprinkle the streusel on top and bake in a preheated oven at 175°C for about 35 minutes.

My grandma always baked it, especially for birthdays or when the whole family got together. The smell of poppy seeds and butter that spread throughout the house is unforgettable. I have refined her recipe over the years and adapted it to the Thermomix® to make the preparation easier without changing the original taste. The ingredients all play an important role. The poppy seeds, of course, are the star. They provide the characteristic nutty note and the juicy texture. The ground almonds enhance this nutty flavor and give the cake an additional fine structure. The candied peel brings a slightly candied sweetness and an interesting texture to the poppy seed mixture. Bitter almond oil and honey round off the aroma and give the cake a special depth. The streusel, with their buttery sweetness and slight crunch, form a perfect contrast to the juicy poppy seed topping. With the Thermomix®, it is important to pay attention to the order of the ingredients. Always start with the liquid ingredients to achieve an optimal result. Make sure that the milk for the yeast mixture is not too hot, as the yeast will die otherwise. When chopping the candied peel, it is important not to mix for too long, otherwise it will become too fine. The poppy seed mixture should have enough time to soak after boiling so that the poppy seeds can absorb the liquid and the cake does not become too dry later. When making the streusel, it is important that the butter is cold so that it does not melt and the streusel becomes nice and crumbly. The recipe is already suitable for a vegetarian version. If you want to try a vegan version, you can replace the butter with margarine and use plant-based alternatives instead of the eggs. Agave nectar can be used instead of honey. Feel free to experiment with other spices! A touch of cinnamon or cardamom in the streusel or poppy seed mixture can give the cake an interesting note. Serve the poppy seed cake with a scoop of vanilla ice cream or a dollop of whipped cream. A glass of cold milk or a cup of coffee also go perfectly with it. The cake can be kept, well packaged, in the refrigerator for a few days. It can also be prepared well in advance: the yeast dough and the poppy seed mixture can be prepared the day before and stored in the refrigerator. However, the streusel should be prepared fresh, otherwise they will lose their crispness.
