Ingredients (14 ingredients)

  • 400 g Tortglioni or Penne
  • 400 g Canned diced tomatoes
  • 30 g Pecorino
  • 500 g Eggplant
  • 2 Zehen Garlic
  • 1 Handvoll Fresh basil leaves
  • 1 TL Dried oregano
  • 4.5 EL Olive oil
  • 1 EL Capers (optional)
  • 1 EL Balsamic vinegar
  • 0.5 TL Sugar
  • 1 Prise Salt
  • 1 Prise Freshly ground black pepper
  • 1 Portion Parmesan or Pecorino, freshly grated (for serving)

Preparation (6 steps)

Prepare eggplant

Clean and wash 500g of eggplant, cut into 1 cm thick slices and then into cubes. Salt well and let it sit in a sieve for 15 minutes to drain water. Then pat dry with paper towels.

Marinate eggplant

Mix the eggplant cubes with 1 tsp oregano, 1/2 tbsp olive oil, 1 pinch of salt and 1 pinch of black pepper. Peel 2 cloves of garlic and cut into fine slices. Wash and shake dry 1 handful of basil leaves and cut into strips, set aside. Finely grate 30 g Pecorino, set aside.

Chop garlic

Put the garlic cloves in the mixing bowl and chop for 3 sec./speed 7. Transfer.

Sauté eggplant in the Thermomix

Put 4 tbsp olive oil in the mixing bowl. Add eggplant cubes and sauté for 8 min./120°C/Reverse/speed Soft. Add 1 tbsp olive oil if necessary. Add chopped garlic and 1-2 tbsp capers and sauté for 1 min./120°C/Reverse/speed Soft.

Cook sauce

20 min/212°F/Linkslauf/Gentle stir speed 212°F Reverse

Add 1 can of diced tomatoes, 1 tbsp balsamic vinegar, 1/2 tsp sugar, 1/2 tsp salt and 1 pinch of black pepper to the mixing bowl and cook for 20 min./100°C/Reverse/speed Soft.

Cook and mix pasta

Cook 400 g pasta separately according to package directions until al dente. Drain and add to the sauce in the mixing bowl while still dripping wet. Mix thoroughly, adding some pasta water as needed. Stir in basil strips and grated Pecorino. Garnish with Parmesan or Pecorino.
