This potato and vegetable soup is a comforting and satisfying meal, perfect for a chilly day. I've been making this recipe for years, and it's always a hit with my family. The combination of potatoes, carrots, and spices creates a warm and flavorful broth. It's a great way to use up leftover vegetables and can easily be adapted to your liking. Ingredients (12 ingredients)

  • 1.5 litres vegetable or chicken stock
  • 5 piece potatoes
  • 1 piece carrot
  • 2 piece bay leaves
  • 5 piece allspice berries
  • 1 tbsp butter
  • 1 piece onion
  • 1 tbsp plain flour
  • 2 tbsp vegetable oil
  • 2 slice bread
  • 1 piece parsley
  • 50 g sausage

Preparation (8 steps)

Prepare the vegetables

Peel and roughly chop the potatoes and carrot. Add the vegetable or chicken stock, potatoes, carrot, bay leaves, and allspice berries to the Thermomix bowl.

Cook the soup

Cook the soup for 30 min/100°C/Stufe 1.

Sauté the onion

Peel and halve the onion. Add the onion to the Thermomix bowl and chop for 3 Sek./Stufe 5. Add the vegetable oil and butter and sauté for 8 Min./120°C/Stufe 1.

Make the roux

Add the plain flour to the Thermomix bowl and cook for 1 Min./100°C/Stufe 2 to create a roux.

Combine and simmer

Thermomix® Setting

Add 2 tbsp of the cooked soup stock to the Thermomix bowl and mix for 10 Sek./Stufe 3 to create a smooth mixture. Then, add the remaining soup from the previous step back into the Thermomix bowl.

Thicken the soup

60 min/194°F/Speed 1 90

Cook the soup for 60 Min./90°C/Stufe 1. The potatoes will break down and the soup will thicken.

Prepare the bread and sausage

While the soup is thickening, heat the oil in a frying pan. Fry the bread until browned and crisp. Season well and set aside. Separately, fry the sausage slices in the same pan until browned.

Serve

Pour the soup into bowls. Scatter the fried bread and chopped parsley across the soup. You can also add slices of fried sausage to the soup, if you like.
