  • Provola
  • Grated Parmesan cheese
  • Red salt
  • Beef muscle
  • Beef rib cover
  • Pork ribs
  • Pork thigh
  • Veal rump
  • Onion
  • Red wine
  • Parsley
  • Garlic
  • Double tomato concentrate
  • Tomato puree
  • Extra virgin olive oil (EVO)
  • Lard

Preparation (7 steps)

Initial preparation of the ingredients

Bring a large pot of salted water to a boil for cooking the ziti. While the water is heating up, prepare all the ingredients for the ragout.

Cooking the ziti

Drop the ziti into the boiling salted water and cook for about 3-4 minutes less than the cooking time indicated on the package. Drain them al dente.

Seasoning the ziti

Pour two ladles of Neapolitan ragout into a large bowl. Drain the ziti directly into the bowl with the ragout and mix gently to flavor the pasta.

Assembly of the gratin

Spread a thin layer of ragout on the bottom of a large baking dish. Arrange a layer of seasoned ziti in the baking dish. Add a layer of diced provola and a generous sprinkling of grated Parmesan cheese.

Second layer and gratin

Repeat the layers: add another layer of seasoned ziti, diced provola and grated Parmesan cheese. Finish with a layer of grated Parmesan cheese.

Cooking in the oven

Transfer the baking dish to a preheated oven at 190°C and cook for about 30 minutes, or until the surface is golden brown and crispy.

Cooling and serving

Once the desired doneness is reached, remove the gratin from the oven and let it cool for a few minutes before serving.
