Description
Delicious lemon cookies, perfect for Christmas or any festive occasion.
Ingredients (10 ingredients)

250 g Sugar

1 Stück Lemon (untreated, peel)
-
250 g soft Butter
-
1 Stück Egg
-
1 Prise Salt
-
500 g Flour
-
1 Pck. Baking powder
-
200 g Icing sugar
-
3 EL Lemon juice
-
Sugar sprinkles (optional)
Preparation (8 steps)
Mix sugar and lemon peel
Put sugar and grated peel of a lemon in the mixing bowl and mix for 10 sec/speed 10.
Add butter, egg and salt
Add soft butter in pieces, egg and salt and stir for 30 sec/speed 4.
Mix flour and baking powder and add
Mix flour and baking powder, add to the mixing bowl and process for 2 min/kneading stage to a smooth dough.
Chill dough
Wrap the dough in cling film and refrigerate for at least 30 minutes.
Cut out cookies
Preheat the oven to 180 °C top/bottom heat. Roll out the dough on a floured work surface to about 3 mm thick and cut out cookies with cookie cutters. Place the cookies on a baking sheet lined with baking paper.
Bake cookies
Bake the cookies in the preheated oven for about 8–10 minutes until golden brown. Then let cool on a wire rack.
Mix lemon juice and icing sugar
For the icing, put icing sugar and lemon juice in the mixing bowl and stir for 20 sec/speed 3.
Decorate cookies with icing
Spread the cooled cookies with the icing and decorate with sugar sprinkles as desired. Let the icing dry.
