Description

This peasant soup with winter vegetables is a comforting and tasty dish, perfect for cold winter days. I often prepare it with seasonal vegetables that I find at the market. Celery, carrots, turnips, leek and green cabbage combine wonderfully to create a soup rich in flavors and nutrients. Smoked bacon adds a gourmet touch and warms the heart. This soup is ideal for a lunch or dinner with the family, and it is very easy to prepare with the Thermomix®. Feel free to add other vegetables according to your tastes and serve with garlic croutons and grated cheese for even more pleasure!

Ingredients (8 ingredients)

  • 14 piece celery
  • 100 g smoked bacon
  • 25 g butter
  • 2 navets turnips
  • 3 carottes carrots
  • 2 pommes de terre potatoes
  • 1 poireau leek
  • 1 chou vert green cabbage

Preparation (5 steps)

Preparation of vegetables and bacon

Roughly chop the celery (14), the turnips (2), the carrots (3), the potatoes (2), the leek (1) and the green cabbage (1) into pieces. Also cut the smoked bacon (100 g) into bacon cubes.

Sauté the vegetables and bacon

Put the butter (25 g) in the Thermomix bowl and melt for 3 Min./120°C/Stufe 1.

Add the vegetables and bacon

5 min/248°F/Speed 1 120

Add the chopped vegetables and bacon cubes to the Thermomix bowl. Sauté for 5 Min./120°C/Stufe 1.

Moisten and cook the soup

Thermomix® Setting
4 Heures/212°F/Speed 1/Linkslauf 100 Reverse

Moisten the vegetables to the top with water. Salt and pepper according to your taste. Program 4 Heures/100°C/Stufe 1/Linkslauf.

Serve the hot soup with garlic croutons and grated Beaufort.
