Description

This Colombian hen soup, also known as sancocho, is a comforting and flavorful dish, perfect for cold days. The hen or chicken is slowly cooked with a variety of vegetables such as potatoes, cassava, green plantain and corn, creating a substantial and nutritious broth. It is an ideal dish to share with family or friends, and its preparation in the Thermomix® greatly facilitates the process. Ingredients (12 ingredients)

  • 1 piece whole chicken or hen
  • 4 piece potatoes peeled and chopped in large size
  • 2 piece green plantains chopped by hand not too small
  • 1 piece cassava cut and peeled
  • 1 piece onion
  • 1 piece red pepper
  • 2 piece carrots
  • 1 puñado cilantro or parsley
  • 1 bunch spring onion
  • salt
  • 4 clove garlic
  • 1 piece corn or maize

Preparation (7 steps)

Prepare the hen broth

Thermomix® Setting
20 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Place plenty of water in the Thermomix bowl. Add the whole hen or chicken, the garlic cloves, the spring onion and a tablespoon of salt. Program 20 min/100°C/Reverse rotation/Spoon speed.

Crush onion and pepper

While the hen is cooking, place the onion and red pepper in the Thermomix bowl. Crush for 5 sec/Speed 5.

Add the sofrito to the broth

Pour the mixture of crushed onion and pepper into the Thermomix bowl with the hen broth. Program 5 min/100°C/Speed 1.

Incorporate the vegetables

10 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Add the potatoes, cassava, corn and plantain to the Thermomix bowl. Program 10 min/100°C/Reverse rotation/Spoon speed.

Add the carrots

5 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Incorporate the carrots cut into quarters or irregular pieces into the Thermomix bowl. Program 5 min/100°C/Reverse rotation/Spoon speed.

Add cilantro and spring onion

Thermomix® Setting
1 min/Velocidad 1/Giro inverso Reverse

Add the finely chopped spring onion and fresh cilantro to the Thermomix bowl. Mix gently with the spatula. Program 1 min/Speed 1/Reverse rotation.

Serve

Check the seasoning before serving. Serve the sancocho in a deep plate, placing a piece of hen or chicken, surrounded by the tubers, corn, plantain and covered by the broth. Serve hot.
