Description

This hearty vegetable soup with crispy bread cubes is a real feel-good dish for cold days. I like to make it when I have stale bread rolls left over - so nothing is wasted! The soup is quick to prepare and tastes great to the whole family. The vegetables are sautéed in the Thermomix® and then cooked with broth. The gold cubes, as I call them, are the highlight: baked golden brown in the pan, they give the soup a great crunch. If you like, you can add a dollop of sour cream. An ideal dish for a quick lunch or dinner!

Ingredients (12 ingredients)

  • 4 piece Stale bread roll
  • 4 piece Egg(s)
  • 4 tbsp Milk
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Nutmeg
  • 1 piece Kohlrabi
  • 200 g Leek
  • 200 g Carrot(s)
  • 1 tbsp Margarine
  • 1 Liter Broth
  • 1 tbsp Sour cream

Preparation (11 steps)

Prepare bread rolls

Cut the stale bread rolls into small cubes and place in a bowl.

Prepare egg milk

Whisk the eggs, milk, salt, pepper and nutmeg in a separate bowl.

Soak bread rolls with egg milk

Pour the egg milk over the bread cubes and mix well so that all the cubes absorb the liquid. Let it soak briefly.

Fry golden cubes

Heat some oil in a pan and bake the bread cubes in it until golden brown. Then drain on kitchen paper.

Prepare vegetables

Peel the kohlrabi and cut into cubes. Cut the leek into rings and the carrots into sticks.

Sauté vegetables

Put the margarine in the mixing bowl and melt for 2 min./120°C/speed 1.

Add vegetables

Put the prepared vegetables (kohlrabi, leek, carrots) in the mixing bowl and sauté for 5 min./120°C/speed 1.

Cook soup

15 min/212°F/Speed 1 100

Pour the broth into the mixing bowl and cook for 15 min./100°C/speed 1.

Season the soup

Season the soup with salt and pepper and add more spices if necessary.

Stir in sour cream

Thermomix® Setting

Add the sour cream to the mixing bowl and stir in for 10 sec./speed 2.

Serve

Fill the soup into bowls and serve sprinkled with the gold cubes and fresh parsley. The gold cubes can also be served separately.
