Description

This recipe for chicken fillet in creamy bell pepper sauce is an absolute culinary delight! I like to make it when I need something quick, but still want something special on the table. The tender chicken fillet goes perfectly with the fruity bell pepper and creamy sauce. A hint of sherry provides that certain something. It tastes particularly delicious with fresh baguette for dipping in the sauce. The preparation is straightforward and succeeds in no time with the Thermomix®. Ideal for a cozy dinner with friends or family!

Ingredients (13 ingredients)

  • 1 piece Onion
  • 2 piece Spring onions
  • 3 piece red bell peppers
  • 250 g small Mushrooms
  • 600 g Chicken fillet
  • 0.5 bunch Basil
  • 2 tbsp Oil
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Flour
  • 200 g Whipping cream
  • 4 tbsp dry Sherry
  • 75 g grated Gouda

Preparation (7 steps)

Prepare onion and spring onions

Thermomix® Setting
3 sec/Speed 5

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5. Clean 2-3 spring onions and cut into rings. Set aside.

Prepare bell peppers and mushrooms

Quarter, core and dice 3 red bell peppers. Wash and halve or quarter 250 g small mushrooms (depending on size). Set aside.

Prepare chicken fillet

Pat 600 g chicken fillet dry and cut into slices. Wash ½ bunch of basil, except for some for garnish, roughly chop. Set aside.

Sauté vegetables

Thermomix® Setting
4 min/248°F/Speed 1 120

Put 2 tbsp oil in the mixing bowl, add the chopped onion and sauté for 3 min./120°C/speed 1. Add spring onions, bell peppers and mushrooms and sauté for another 4 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
10 sec/Speed 3 90

Put 1 tbsp flour in the mixing bowl and sauté for 1 min./100°C/speed 2. Add 200 g whipping cream and 4 tbsp dry sherry, bring to the boil and simmer for 3 min./90°C/speed 2. Add chopped basil, salt and pepper to taste and stir in for 10 sec./speed 3.

Mix meat and vegetables

Put the fried chicken fillet and the bell pepper vegetables in a casserole dish. Pour the sauce from the mixing bowl over it and mix.

Gratinate

Sprinkle 75 g grated Gouda over the casserole. Bake in a preheated oven (electric oven: 230°C/convection oven: 210°C) for approx. 8 minutes.
