Description

I love preparing these fried cauliflower florets! They are crispy on the outside and tender on the inside, a true pleasure for the palate. The light and flavorful batter, enriched with fresh parsley, makes this dish irresistible. Perfect as a tasty appetizer or as an original side dish, these cauliflower florets are ready in just 30 minutes. A simple and economical idea to bring a touch of taste and originality to the table.   • Cauliflower
  • 00 flour
  • Brewer's yeast
  • 1 piece Egg yolk
  • Chopped parsley
  • Salt
  • Peanut seed oil
  • Rosemary
  • Garlic cloves

Cauliflower preparation

Clean the cauliflower by removing the outer leaves and the hard part of the stem. Separate the florets and wash them carefully. If they are too large, cut them into smaller pieces. Set aside.

Chop the parsley

Wash and dry the parsley. Insert the parsley into the bowl and chop for 3 Sec./Stufe 7. Transfer the chopped parsley to a bowl and set aside.

Batter preparation

In a bowl, separate the yolk from the egg white (only the yolk is needed). Add the flour, salt and chopped parsley to the yolk. Mix with a whisk.

Complete the batter

Pour in the cold beer slowly, continuing to mix with a whisk until you obtain a smooth, lump-free batter. Add the cauliflower florets and mix well to coat them completely.

Flavor the oil

In a large pan, heat the peanut seed oil over medium heat. Add the crushed garlic cloves and rosemary to flavor the oil. Let the oil heat up.

Fry the cauliflower

When the oil is hot, immerse the cauliflower with tongs and fry for 2-3 minutes, until golden brown. Make sure the oil is very hot for crispy frying.

Drain and serve

Drain the cauliflower on absorbent paper to eliminate excess oil, then move it to a plate and adjust with salt. Serve hot.
