Ingredients (15 ingredients)

  • 1.5 cups all-purpose flour
  • 1.25 teaspoons ground cinnamon, divided
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground nutmeg, and more as needed
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup brown sugar
  • 0.75 cup shortening, divided
  • 0.25 cup white sugar
  • 2 piece large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup milk
  • 2 cups peeled, cored, and chopped apples
  • 2 cups sifted confectioners' sugar
  • 0.25 cup evaporated milk

Preparation (10 steps)

Prepare the baking pan

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan. This step is done outside of the Thermomix.

Combine dry ingredients

Add 1 ½ cups all-purpose flour, 1 teaspoon ground cinnamon, 1 teaspoon baking powder, ¼ teaspoon ground nutmeg, ½ teaspoon baking soda, and ½ teaspoon salt to the mixing bowl. Mix for 10 Sec./Stufe 4 to combine. Transfer to a separate bowl and set aside.

Cream sugar and shortening

Thermomix® Setting
30 sec/Speed 4

Add 1 cup brown sugar, ½ cup shortening, and ¼ cup white sugar to the mixing bowl. Mix for 30 Sec./Stufe 4 until light and fluffy. Use the spatula to scrape down the sides of the bowl.

Add eggs and vanilla

10 sec/Speed 3 (x2), 5 sec/Speed 3

Add 2 large eggs, one at a time, mixing for 10 Sec./Stufe 3 after each addition. Then add 1 teaspoon vanilla extract and mix for 5 Sec./Stufe 3.

Combine wet and dry ingredients

15 sec/Speed 3

Gradually add the flour mixture from step 2 and ½ cup milk to the mixing bowl, alternating between the two. Mix for 15 Sec./Stufe 3 after each addition, until just combined. Use the spatula to scrape down the sides of the bowl as needed.

Add apples

10 sec/Linkslauf Speed 2 Reverse

Add 2 cups peeled, cored, and chopped apples to the mixing bowl. Mix on Linkslauf Stufe 2 for 10 Sec. to incorporate the apples into the batter.

Bake the cake

Transfer the batter to the prepared 9-inch square pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool completely before frosting. This step is done outside of the Thermomix.

Prepare the frosting

Thermomix® Setting
20 sec/Speed 4

Add 2 cups sifted confectioners' sugar, ¼ cup shortening, ¼ teaspoon cinnamon, and 1 pinch nutmeg to the mixing bowl. Mix for 20 Sec./Stufe 4 until the frosting is light and creamy. Use the spatula to scrape down the sides of the bowl.

Adjust frosting consistency

Thermomix® Setting
5 sec/Speed 3

Add ¼ cup evaporated milk, 1 tablespoon at a time, to the mixing bowl. Mix for 5 Sec./Stufe 3 after each addition, until the frosting reaches the desired spreading consistency.

Frost the cake

Spread the frosting over the cooled cake. This step is done outside of the Thermomix.
