Description

This fruity Bundt cake with raspberries and lemon is a delicious dessert for the summer. The preparation is simple and quick with the Thermomix®. The cake is moist and flavorful and is ideal for coffee gatherings or as a sweet surprise in between. The fruity glaze rounds off the taste perfectly. The recipe is suitable for baking enthusiasts.

Ingredients (20 ingredients)

  • 200 g Sugar
  • 1 Stück Medium Lemon
  • 120 g Butter
  • 3 Stück Medium Eggs
  • 120 g Sour cream
  • 1 Pck. Vanilla extract
  • 0.25 TL Bitter almond extract
  • 250 g Wheat flour
  • 0.5 TL Baking powder
  • 0.25 TL Salt
  • 5 g Butter
  • 1 EL Flour
  • 1 EL Flour
  • 150 g Raspberries
  • 75 g Raspberries
  • 1 EL Water
  • 1 TL Honey
  • 1 EL Lemon juice
  • 0.25 TL Bitter almond extract
  • 200 g Powdered sugar

Preparation (8 steps)

Prepare sugar and lemon

Thermomix® Setting

Add 200 g sugar and 1 medium lemon to the mixing bowl and place the Wundermix WunderSlicer V2 with the fine disc on the mixing bowl lid. Chop for 5 sec/speed 8. Collect the chopped ingredients.

Prepare the batter

Add 120 g butter, 3 medium eggs and 120 g sour cream to the mixing bowl and mix with the Meistermix Patix dough knife for 3 min/speed 4.

Add dry ingredients

Thermomix® Setting

Add 1 pack vanilla extract, ¼ tsp bitter almond extract, 250 g wheat flour, ½ tsp baking powder and ¼ tsp salt to the mixing bowl and stir in for 2 min/speed 3.

Prepare the cake tin

Grease a cake tin with 5 g butter and dust with 1 tbsp flour.

Prepare fruit filling

Mix 1 tbsp flour and 150 g raspberries and fold into the dough.

Bake the dough

Pour the dough into the prepared cake tin and bake in a preheated oven at 180°C top/bottom heat for approx. 50 minutes.

Prepare the glaze

Thermomix® Setting
20 sec/Speed 6

Add 75 g raspberries, 1 tbsp water, 1 tsp honey, 1 tbsp lemon juice, ¼ tsp bitter almond extract and 200 g powdered sugar to the mixing bowl and mix for 20 sec/speed 6.

Glaze the cake

Coat the cooled cake with the glaze.
