Description

This gluten-free chocolate almond sheet cake is a real treat for anyone who needs or wants to avoid gluten. The almonds and chocolate make the cake particularly moist and flavorful. I like to bake it for birthdays or other celebrations because it's so easy to make and always goes down well. Preparation with the Thermomix® is super quick and easy. An absolute must for all cake lovers!

Ingredients (12 ingredients)

  • 250 g Margarine (soft)
  • 250 g Sugar
  • 4 piece Eggs (M)
  • 450 g Flour mixture gluten-free
  • 3 tsp Baking powder
  • 50 g Baking cocoa
  • 1 pinch Salt
  • 500 ml Milk
  • 100 g Whole milk chocolate
  • 100 g Almonds (flaked)
  • 200 g Bittersweet chocolate coating
  • 100 g Almond slivers

Preparation (7 steps)

Beat margarine and sugar until fluffy

Put 250 g soft margarine and 250 g sugar in the mixing bowl and beat for 3 min/speed 4 until fluffy.

Stir in eggs

Add 4 eggs (M) one after the other and stir in for 20 sec/speed 3 each time.

Mix and stir in dry ingredients

Put 450 g gluten-free flour mixture, 3 tsp baking powder, 50 g baking cocoa and 1 pinch of salt in the mixing bowl and mix for 20 sec/speed 4. Then add 500 ml milk and stir in for 30 sec/speed 4.

Add chocolate and almonds

Add 100 g chopped whole milk chocolate and 100 g flaked almonds to the mixing bowl and stir in for 15 sec/reverse speed 2. Add a little more liquid if necessary.

Baking

Spread the dough on a baking sheet (37 x 42 cm) lined with baking paper and bake in a preheated oven at 175 °C top/bottom heat (150 °C convection) for approx. 30-35 minutes. Do a stick test. Let cool.

Melt coating

Put 200 g chopped bittersweet chocolate coating in the mixing bowl and melt for 4 min/50°C/speed 2.

Decorate

Sprinkle the melted chocolate coating over the cooled cake and sprinkle with 100 g almond slivers.
