Description

These banana buckwheat pancakes are an absolute delight and perfect for a relaxed breakfast or a delicious brunch! I especially like to make them when I have to use up ripe bananas. Thanks to the buckwheat and teff flour, they are gluten-free and have a slightly nutty note. The pancakes are super fluffy and simply taste delicious with fresh banana slices, agave syrup and a dollop of peanut butter. The preparation is very easy and does not take long, ideal for a quick start to the day. Try it, you will be thrilled!

Ingredients (10 ingredients)

  • 3 piece ripe bananas
  • 350 ml Soy milk
  • 120 g Buckwheat flour
  • 60 g Teff flour
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 0.5 tsp Cinnamon
  • 2 tbsp Oil
  • 1 tbsp Agave syrup
  • 3 tbsp Peanut butter

Preparation (7 steps)

Prepare bananas

Peel 2 bananas and put them in the mixing bowl.

Chop bananas

Chop the bananas 5 sec./speed 4.

Prepare dough

Add soy milk, buckwheat flour, teff flour, baking powder, salt and cinnamon to the chopped bananas in the mixing bowl.

Mix dough

20 sec/Speed 3

Mix all ingredients 20 sec./speed 3 into a smooth dough.

Let dough rest

Let the dough rest for about 10 minutes in the mixing bowl.

Bake pancakes

Heat oil in portions in a pan and bake the dough in portions to pancakes.

Arrange pancakes

Cut the remaining banana into slices. Stack the pancakes on top of each other into two towers, top with banana slices and drizzle with agave syrup and peanut butter.
