  • 2 piece eggs
  • 1 packet vanilla sugar
  • 6 slice brioches
  • 3 pinch flower of salt
  • 10 g butter
  • 10 cl liquid cream
  • 100 g powdered sugar

Preparation of the French toast batter

Pour the milk into the Thermomix bowl. Add the sachet of vanilla sugar. Mix 10 Sec./Level 3, to dissolve the sugar.

Add the eggs to the Thermomix bowl and mix 10 Sec./Level 4.

Soaking the brioche slices

Pour the milk-egg mixture into a shallow dish. Dip the brioche slices in the mixture to soak them lightly.

Cooking the French toast

Melt some of the butter in a pan. Cook the soaked brioche slices in the pan, turning them halfway through cooking, until they are golden brown on both sides. Set aside.

Preparation of the caramel

15 min/248°F/Speed 1 120

Pour the powdered sugar into the Thermomix bowl. Caramelize 15 Min./120°C/Level 1, without stirring attachment. Watch until the sugar takes on a beautiful, light brown color.

Adding the cream

Thermomix® Setting
10 sec/Speed 3

Slightly heat the liquid cream (e.g. in the microwave). Carefully pour the warm cream into the mixing bowl to the caramel. Warning: It may splash! Stir 10 Sec./Level 3.

Finalizing the caramel

20 sec/Speed 3.5

Add the butter cut into small cubes and the flower of salt. Mix 20 Sec./Level 3.5, until everything is well mixed.

Serve

Pour the caramel into a glass jar. Serve the hot French toast with the salted butter caramel.
