Description

This savory gyros soup is an absolute hit at every party! I've been making it for years and it's always a hit. The secret lies in the combination of tender meat, crunchy vegetables and a creamy sauce. The preparation is very simple and goes ruckzuck with the Thermomix®. Perfect when you need something quick or are expecting a lot of guests. The soup can also be prepared well in advance and kept warm. I recommend fresh baguette or pita bread as a side dish. A hearty treat for young and old!

Ingredients (23 ingredients)

  • 1000 g Pork escalope
  • 1000 ml Vegetable stock
  • 400 g Whole canned tomatoes
  • 400 g Red bell pepper
  • 150 g Yellow bell pepper
  • 150 g Onions
  • 200 g Sour cream
  • 200 g Cream
  • 2 clove Garlic cloves
  • 1 piece Chili peppers
  • 8 tsp Gyros spice
  • 1 tbsp Flour
  • 1 tbsp Marjoram
  • 1 tsp Lemon juice, fresh
  • 1 tbsp Tomato paste
  • to taste Salt
  • to taste Black pepper from the mill
  • 4 tbsp Neutral vegetable oil
  • 3 tsp Paprika powder, sweet
  • 2 tsp Oregano
  • 2 tsp Thyme, rubbed
  • 1 tsp Salt
  • 0.5 tsp Cumin, ground

Preparation (11 steps)

Chop onions, garlic and chili pepper

Put 150 g onions and 2 garlic cloves into the mixing bowl and chop for 3 sec./level 5. Wash, core and add 1 chili pepper and chop for a further 3 sec./level 5.

Prepare peppers

Wash and core 400 g red and 150 g yellow bell peppers and cut into bite-sized pieces. Set aside.

Prepare meat

Cut 1 kg pork escalope into strips, place in a bowl and mix with 8 tsp gyros spice.

Fry meat

Heat 2 tbsp vegetable oil in a pan and sear the meat in it for approx. 3 minutes over high heat. Then remove from the pan and set aside.

Sauté onions and chili pepper

Put 2 tbsp vegetable oil into the mixing bowl and sauté for 2 min./120°C/level 1.

Sauté peppers and garlic

Add the prepared pepper pieces and sauté for 2 min./120°C/level 1.

Roast tomato paste

Add 1 tbsp tomato paste and roast briefly for 1 min./120°C/level 1.

Dust with flour

Thermomix® Setting

Add 1 tbsp flour and stir in for 20 sec./level 2.

Deglaze and bring to the boil

Add 400 g whole tomatoes with juice and 1 l vegetable stock. Use the spatula to chop the tomatoes a little and bring to the boil for 10 min./100°C/level 1.

Refine and season

Thermomix® Setting

Add 200 g sour cream, 200 g cream, 1 tbsp marjoram, 1 tsp lemon juice, 3 tsp paprika powder sweet, 2 tsp oregano, 2 tsp thyme, 1 tsp salt and 0.5 tsp cumin and simmer for 5 min./90°C/level 1.

Add meat and season

5 min/194°F/Linkslauf Speed 1 90 Reverse

Add the fried meat and heat for 5 min./90°C/reverse rotation level 1. Season with salt and pepper.
