Description

This Spätzle cheese casserole is absolute soul food! The combination of the homemade Spätzle, the creamy cheese and the sweet and sour balsamic onions is simply unbeatable. I especially like to make it in autumn when it gets colder outside. The preparation is a bit more complex, but it's definitely worth it! If you like it a bit faster, you can of course also use ready-made Spätzle. A hearty dish that the whole family will love. Perfect for a cozy evening!

Ingredients (11 ingredients)

  • 400 g Spätzle flour (Wheat flour Type 00)
  • 4 piece Eggs (M)
  • 125 ml Mineral water
  • 3 tbsp Butter
  • 2 tsp Sugar
  • 2 tbsp Balsamic vinegar
  • Pepper
  • 200 ml Cream
  • 200 ml Milk
  • 2 tsp Mustard
  • 8 slice Nutmeg

Preparation (8 steps)

Prepare Spätzle dough

Thermomix® Setting
2 min/Kneading speed

Add 400 g Spätzle flour, 4 eggs, 125 ml mineral water and 1 tsp salt to the mixing bowl and mix for 2 min/kneading stage to a smooth dough. Then let the dough rest in the mixing bowl for 10 minutes.

Prepare onions

Peel the onions, halve them and cut them into fine strips. Do not carry out this step in the Thermomix, otherwise the onions will become too fine.

Caramelize balsamic onions

Heat 2 tbsp butter in a pan and sauté the onions until translucent. Add 2 tsp sugar and let it caramelize lightly. Deglaze with 2 tbsp balsamic vinegar, reduce briefly and season with salt and pepper. Do not carry out this step in the Thermomix, as the caramelization works better in the pan.

Cook Spätzle

Bring salted water to a boil in a saucepan. Press the dough in portions through a Spätzle press into the water. As soon as the Spätzle rise to the surface, remove with a slotted spoon and drain. Do not carry out this step in the Thermomix, as the Spätzle are traditionally cooked in the pot.

Prepare sauce

Thermomix® Setting

Add 200 ml cream, 200 ml milk, 2 tsp mustard, pepper and nutmeg to the mixing bowl and mix for 30 sec/speed 3.

Layer casserole

Preheat oven to 200 °C top/bottom heat (180 °C fan oven). Grease a casserole dish with 1 tbsp butter. Place Spätzle in the casserole dish and pour the sauce from the mixing bowl over it.

Add cheese and bake

Place 8 slices of Raclette cheese evenly on the Spätzle. Bake in the preheated oven for approx. 20 minutes until the cheese is golden brown.

Serve

Remove the finished casserole from the oven and serve topped with the balsamic onions.
