Description

This slow-cooked beef with root vegetables is a hearty and comforting meal, perfect for a chilly autumn or winter evening. I've been making this dish for years, and it's always a crowd-pleaser. The beef becomes incredibly tender, and the vegetables soak up all the delicious flavors from the bouillon. It's a simple recipe that requires minimal effort, making it ideal for busy weeknights. The best part is that you can simply set it and forget it, letting the Thermomix® do all the work. Serve it with a side of crusty bread to soak up the flavorful juices. This is a great way to use up leftover vegetables too!

Ingredients (7 ingredients)

  • 6 piece medium potatoes
  • 1 piece medium yellow onion
  • 2 piece stalks celery
  • 1.5 cups baby carrots
  • 3 pound beef roast
  • 3 cube beef bouillon
  • 0.5 cup water

Preparation (5 steps)

Prepare the vegetables

Cut the potatoes, onion, and celery into fairly large chunks. No Thermomix settings are needed for this step.

Layer ingredients in the Thermomix

Place the cut potatoes, onion, and celery into the Thermomix bowl along with the baby carrots. Place the beef roast on top of the vegetables. Place the bouillon cubes randomly on top of the roast and pour in the water.

Slow cook the roast

Thermomix® Setting
8 hours/203°F/Reverse Blade/Speed 1 95 Reverse

Cover the Thermomix and cook on low setting for 6 to 8 hours. Set the Thermomix to 8 hours/95°C/Reverse Blade/Speed 1.

Check internal temperature

After cooking, use an instant-read thermometer inserted in the thickest part of the roast to ensure it reads 145 degrees F (65 degrees C).

Serve

Transfer the roast to a platter. Remove the vegetables using a slotted spoon and arrange them around the roast. Serve immediately.
