Description

This Thermomix® recipe for lemon brownies combines the tart taste of lemon with the sweetness of sugar and the richness of butter and eggs. Preparation in the Thermomix® takes about 60 minutes, of which 25 minutes are active work time. The recipe yields 16 servings and is ideal as a dessert or cake for the spring. Thanks to the WunderSlicer V2 from Wundermix, the lemon zest is processed quickly and easily.

Ingredients (11 ingredients)

  • 200 g Sugar
  • 2 Stück Lemons (peel)
  • 125 g Butter
  • 2 Stück Eggs
  • 2 EL Lemon juice
  • 125 g Flour
  • 0.5 TL Baking powder
  • 150 g Powdered sugar
  • 3 EL Lemon juice (for the glaze)
  • Lemon zest (optional)
  • Lemon slices (optional)

Preparation (10 steps)

Preheat oven

Preheat the oven to 175°C top/bottom heat.

Prepare baking pan

Line a brownie pan (approx. 20x20 cm) with baking paper.

Mix sugar and lemon peel

Thermomix® Setting

Place 200 g sugar and the peel of 2 lemons in the mixing bowl and pulverize for 10 sec/speed 10.

Melt butter

Add 125 g butter in pieces and melt for 3 min/50°C/speed 2.

Add eggs and lemon juice

Thermomix® Setting
20 sec/Speed 3

Add 2 eggs and 2 tbsp lemon juice and stir for 20 sec/speed 3.

Mix flour and baking powder

Thermomix® Setting

Add 125 g flour and 1/2 tsp baking powder and stir for 20 sec/speed 3.

Pour dough into pan

Pour the dough into the prepared pan and smooth it out.

Bake brownies

Bake in the preheated oven for approx. 25-30 minutes. Do a stick test.

Prepare glaze

For the glaze, place 150 g powdered sugar and 3-4 tbsp lemon juice in the mixing bowl and stir for 20 sec/speed 3. Add more lemon juice if necessary until the desired consistency is reached.

Glaze brownies

Spread the cooled brownies with the glaze and decorate with lemon zest as desired. Optional: Use the Wundermix WunderSlicer V2 and the fine disc to cut lemons into thin slices and use for decoration. Place the WunderSlicer V2 on the mixing bowl lid, fill with lemons and cut the slices with light pressure. The cut material can be placed directly on the brownies.
