Description

This lemon cake is a classic cake that can be easily prepared with the Thermomix®. The combination of lemon and icing sugar provides a refreshing taste. The cake is ideal for the afternoon or as a dessert. The preparation time is approx. 65 minutes.

Ingredients (9 ingredients)

  • 210 g Butter, soft, in pieces
  • 220 g Sugar
  • 2 Stück Lemon, zest and juice
  • 3 Stück Eggs
  • 275 ml Milk
  • 420 g Flour Type 405
  • 1 P. Baking powder
  • 1 Prise Salt
  • 220 g Icing sugar

Preparation (8 steps)

Preheat oven

Preheat the oven to 180°C top/bottom heat.

Stir lemon zest and sugar, butter and eggs until frothy

Rub off 2 lemons with the Adjustable Zester. Add lemon zest together with 220g sugar, 210g butter in pieces and 3 eggs to the mixing bowl and stir for 3 min./level 4 until frothy.

Stir in milk, flour, baking powder and salt

Add 275 ml milk, 420 g flour type 405, 1 pack of baking powder and 1 pinch of salt and stir for 1 min./level 3 to a batter.

Fill the dough into the loaf pan and bake

Fill the dough into the Brilliance non-stick loaf pans and smooth it out. Bake in the preheated oven for 40-45 minutes. Do a stick test with the cake hero.

Let the cake cool

Take the lemon cake out of the oven and let it cool in the mold.

Prepare lemon icing

Thermomix® Setting

During this time, add about 30 ml of lemon juice with 220 g of icing sugar to the mixing bowl and stir for 20 sec./level 3 until smooth.

Cover the cake with icing

Remove the cake from the mold and coat with the icing and let it dry.

Decorate and Serve

For decoration, spread some lemon zest over the icing with the Adjustable Zester. Cut lemon cake into slices and serve.
