Description
This lemon cake is a classic for spring and summer. Made with fresh lemons, it's light and refreshing. Preparation in the Thermomix® is quick and easy. The cake is ideal as a dessert or with coffee and is suitable for any occasion.
Ingredients (9 ingredients)

210 g Butter, softened, in pieces

220 g Sugar

2 Stück Lemon, zest and juice

3 Stück Eggs

275 ml Milk
-
420 g Flour Type 405

1 P. Baking powder

1 Prise Salt

220 g Powdered sugar
Preparation (7 steps)
Prepare lemon zest and juice
Grate the zest of 2 lemons and squeeze out the juice. Set both aside.
Mix butter and sugar
Place 210 g of softened butter, in pieces, and 220 g of sugar into the mixing bowl and mix for 2 min./speed 3.
Add eggs
Add 3 eggs and mix for 1 min./speed 4.
Add milk, lemon zest and juice
Add 275 ml of milk, lemon zest, and lemon juice and mix for 30 sec./speed 3.
Mix flour, baking powder and salt
Add 420 g of flour type 405, 1 packet of baking powder and 1 pinch of salt and mix for 1 min./speed 4.
Bake the batter
Pour the batter into a greased cake tin and bake in a preheated oven at 180°C top/bottom heat for approx. 30 minutes.
Prepare powdered sugar glaze
After cooling, sprinkle the cake with 220 g of powdered sugar or coat with a glaze of powdered sugar and lemon juice.
