Description

This seafaring lentil recipe is a delicious and healthy alternative to the traditional stew with chorizo. Prepared with lentils, mussels, prawns and clams, this casserole offers an intense sea flavor that will transport you to the coast. It is perfect for cold winter days and an excellent option for a nutritious and comforting meal. I prepare it often at home and it is always a success. Also, it is very easy to adapt to your tastes, you can add other vegetables or seafood. Go ahead and try it!

Ingredients (12 ingredients)

  • 300 g Lentils
  • 12 piece Mussels
  • 12 piece Prawns
  • 12 piece Clams
  • 3 cucharadas soperas Homemade sofrito
  • 1 l Fish stock or fumet
  • 1 hoja Bay leaf
  • 1 clove Garlic
  • 1 chorrito Worcestershire sauce
  • 2 piece Carrot
  • 1 al gusto Salt
  • 1 al gusto Pepper

Preparation (7 steps)

Soaking the lentils and preparing the clams

Soak the lentils for about an hour. Leave the clams in a bowl with water and a little salt.

Preparing the sofrito

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 1 clove of garlic to the bowl and chop for 3 seconds/speed 7. Add 3 tablespoons of homemade sofrito and sauté for 5 minutes/120°C/speed 1.

Opening the mussels and peeling the prawns

Open the mussels in a saucepan with two fingers of water and peel the prawns. Reserve the mussel water.

Preparing the fumet

Strain the mussel water and add the prawn shells. Cook in a pot to make a simple fumet. Reserve 1 liter of fumet.

Adding carrots and lentils

20 min/212°F/Speed 1 100

Add 2 peeled and chopped carrots to the bowl. Add the drained lentils and 1 liter of fumet. Add 1 bay leaf, salt and pepper to taste. Cook 20 minutes/100°C/speed 1.

Pureeing the vegetables

Thermomix® Setting
30 sec/Speed 10

Add a splash of Worcestershire sauce. Remove the carrots and visible pieces of vegetables. Puree for 30 seconds/speed 10. Incorporate the vegetable cream into the stew.

Adding the seafood

Thermomix® Setting
5 min/212°F/Linkslauf/Speed 1 100 Reverse

Add the bodies of the 12 peeled prawns and the 12 mussels without one of the shells. Add the 12 washed and drained clams. Cook 5 minutes/100°C/Reverse/speed 1, until the clams open.
