Thoroughly clean the mussels by removing the byssus and impurities from the shell. This step is essential for a perfect result.

Cooking the mussels

Add the mussels to the bowl. Cook for 5 Min./100°C/Stufe 1/Linkslauf, without the measuring cup, to open them.

Cleaning and cutting the leeks

In the meantime, clean the leeks by removing the outer leaves and cutting them finely.

Insert the cut leeks into the bowl. Add a drizzle of extra virgin olive oil and cook for 5 Min./120°C/Stufe 1.

Recovering the mussel cooking liquid

Remove the mussels from the bowl and let them cool slightly. Filter the cooking liquid from the mussels and set aside.

Stewing the leeks with the mussel liquid

Add a portion of the mussel cooking liquid to the leeks in the bowl. Cook for 3 Min./100°C/Stufe 1.

Blend the leeks for 10 Sec./Stufe 5. It is not necessary to obtain a smooth puree.

Stuffing the mussels

Remove one half of the shell from the mussels and place them on a baking sheet. Stuff the mussels with the blended leeks and distribute a generous amount of panko on each mussel.

Bake the mussels at 200°C for about 10 minutes or until golden brown.
