Description

These puff pastry doves with custard cream are a perfect dessert to celebrate Easter or for a special breakfast. The flaky puff pastry goes perfectly with the custard cream, creating an irresistible combination of flavors and textures. Ingredients (8 ingredients)

  • 1 rotolo rectangular puff pastry
  • icing sugar
  • 1 piece eggs for brushing
  • 250 ml milk
  • 3 piece egg yolks
  • 60 g sugar
  • 20 g corn starch
  • icing sugar

Preparation (9 steps)

Heated milk

Heat 250 ml of milk in a saucepan on the stove until it almost boils. This step is necessary for the preparation of the custard cream.

Mixed egg yolks and sugar

Put 3 egg yolks and 60 g of sugar in the Thermomix bowl. Mix for 20 Sec./Stufe 4.

Add 20 g of cornstarch to the bowl and mix for 10 Sec./Stufe 3.

Incorporated hot milk

With the Thermomix running at Stufe 2, slowly pour the hot milk into the bowl. Mix for 10 Sec./Stufe 2.

Cooked custard cream

7 min/194°F/Speed 3 90

Cook the custard cream in the Thermomix for 7 Min./90°C/Stufe 3. Make sure the cream thickens.

Cooled cream

Pour the custard cream into a bowl, cover with plastic wrap in contact and let it cool completely. This step is essential for the final consistency of the cream.

Formed doves

Unroll 1 roll of rectangular puff pastry on the surface and cut out the doves with a special cookie cutter. Remove the excess puff pastry and place the doves on a baking sheet covered with baking paper.

Brushed doves

Beat 1 egg with a fork and then brush each dove with a kitchen brush.

Sprinkled and cooked doves

Sprinkle the doves with icing sugar to taste and bake in a preheated static oven at 180 °C for 10-12 minutes or in a fan oven at 170 °C for the same time.
