Description

This hearty main course of stuffed beef roulades is easy to make in the Thermomix®. The main ingredients are beef roulades, onions, pickles, and smoked bacon. Seasoned with medium-hot mustard, salt, and pepper, this recipe is ideal for the cold season. The preparation time is about 100 minutes for 6 servings. A perfect family meal or for festive occasions.

Ingredients (13 ingredients)

  • 1 Stück Onion
  • 120 g Pickles
  • 1000 g Beef roulades
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 80 g Mustard, medium-hot
  • 120 g Smoked bacon
  • 3 EL Clarified butter
  • 1 EL Tomato paste
  • 200 ml Red wine
  • 250 ml Vegetable broth
  • 1 EL Brown sugar
  • 2 TL Cornstarch

Preparation (7 steps)

Chop onions

Thermomix® Setting

Place 1 onion in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down the sides.

Prepare pickles

Cut 120 g of pickles into strips and set aside.

Prepare roulades

Season 1 kg of beef roulades (6 pieces) with salt and pepper. Then spread the meat, flatten if necessary, and spread with 80 g of medium-hot mustard. Top with one to two slices of 120 g smoked bacon, pickle strips and diced onions. Fold the meat in at the sides by about 2 cm, roll up the roulade tightly and secure in several places with kitchen twine.

Sear roulades

Heat 3 tbsp of clarified butter in a roasting pan and sear the roulades on all sides. Add tomato paste and heat briefly.

Prepare the sauce

Add 200 ml red wine, 250 ml vegetable broth and 1 tbsp brown sugar to the roulades in the roasting pan, bring to a boil briefly and simmer for about 75 minutes over low heat. Turn the roulades several times.

Thicken the sauce

Remove the finished roulades from the gravy. Stir 2 tsp cornstarch with a little gravy, add to the remaining gravy in the pan and bring to a boil. Season with salt and pepper.

Serve

Remove the kitchen twine from the finished roulades and serve with the sauce.
