Description

This crispy chicken with peanut and ginger sauce is a dish that I often prepare when I want something tasty and quick. The combination of tender chicken, crunchy peanuts and the sweet and sour sauce with a touch of ginger is simply irresistible! Perfect for a family dinner or with friends, it is prepared in less than an hour and the result is guaranteed. You can accompany it with basmati rice or noodles for a complete meal. If you love oriental flavors, this will surely become one of your favorite dishes! A tip: don't be afraid to add a pinch of chili pepper for an extra touch of spiciness.

  • Peanuts
  • Ginger
  • Soy sauce
  • Fish sauce
  • Vegetable broth
  • Cornstarch
  • Shallot
  • Peanut oil

Sauce preparation

In the Thermomix bowl, pour the vegetable broth, soy sauce, fish sauce and cornstarch. Mix for 10 Sec./Stufe 4.

Toasting the peanuts

Pour the peanut oil into a pan and heat over medium heat. Add the peanuts and toast for about 5 minutes, stirring constantly, until golden and fragrant. Remove the peanuts from the pan and set aside.

Sautéing shallot and ginger

Thermomix® Setting
3 min/248°F/Speed 1 120

In the Thermomix bowl, insert the shallot cut into slices and the ginger. Chop for 3 Sek./Stufe 5. Add a drizzle of peanut oil and sauté for 3 Min./120°C/Stufe 1.

Cooking the chicken

Thermomix® Setting
15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the chicken breast cut into small pieces of about 2 cm in the bowl. Cook for 15 Min./100°C/Stufe 1/Linkslauf, stirring gently with the spatula halfway through cooking.

Adding the sauce and peanuts

5 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour the sauce prepared previously in the bowl with the chicken. Cook for another 5 Min./100°C/Stufe 1/Linkslauf. Add the toasted peanuts and stir gently with the spatula.

Consistency adjustment

1 min/212°F/Speed 1/Linkslauf 100 Reverse

If the sauce should reduce too much during cooking, add a ladle of vegetable broth and mix for 1 Min./100°C/Stufe 1/Linkslauf.
