Description

This Polish beetroot soup, also called Barszcz, is a hearty and warming dish that tastes especially good in the cold season. I like to cook it when I need something hearty. The beetroot gives the soup a slightly sweet note, which is wonderfully balanced by the herb vinegar. The bacon provides a smoky depth. The preparation takes a little time, but the result is worth every minute. Perfect as a main course on a cozy evening!

Ingredients (14 ingredients)

  • 1 Pck. Soup vegetables
  • 300 g Bacon
  • 3 piece Beetroot, large
  • 1 Handvoll Mushrooms, dried
  • 1 Handvoll Parsley, smooth
  • 1 Handvoll Dill
  • 2 clove Garlic
  • Bay leaves
  • Juniper berry(ies)
  • Allspice berries
  • to taste Salt
  • to taste Pepper
  • 4 tsp Honey
  • Herb vinegar

Preparation (7 steps)

Prepare soup vegetables and bacon

Cut 1 pack of soup vegetables into coarse pieces. Also coarsely cut 300 g of bacon. Crush a handful of dried mushrooms in your hand.

Prepare herbs

Put a handful of parsley and dill into the mixing bowl and chop for 3 sec./speed 5. Transfer.

Prepare garlic

Thermomix® Setting
3 sec/Speed 7

Peel 2 cloves of garlic, put them in the mixing bowl and chop for 3 sec./speed 7. Transfer.

Cook soup

Thermomix® Setting
90 min/212°F/Speed 1 Linkslauf 100 Reverse

Put the roughly chopped soup vegetables, the chopped bacon, bay leaves, juniper berries, allspice berries, 4 tsp of honey and some salt in the mixing bowl. Cover with water and simmer for 90 min./100°C/speed 1 reverse. Add water if necessary.

Strain soup

Pass the soup through a sieve and collect the liquid. Put the liquid back into the mixing bowl.

Cook beetroot

15 min/212°F/Speed 1 Linkslauf 100 Reverse

Peel 3 large beetroots, grate coarsely and add to the mixing bowl together with the chopped garlic. Simmer for 15 min./100°C/speed 1 reverse.

Refine soup

Thermomix® Setting
5 min/212°F/Speed 1 Linkslauf 100 Reverse

Cut the bacon into cubes and add back to the soup. Add the chopped parsley, dill, pepper and herb vinegar to taste. Heat for 5 min./100°C/speed 1 reverse.
