Description

Dieses Gericht ist ein absoluter Sommerhit! Zartes, mariniertes Hähnchen trifft auf einen erfrischenden Orzo-Salat mit sonnengereiften Tomaten, knackiger Gurke, salzigen Oliven und cremigem Feta. Die Zitronen-Vinaigrette verleiht dem Ganzen eine herrlich leichte Note. Ich mache das Rezept gerne, wenn es schnell gehen muss, aber trotzdem etwas Besonderes auf den Tisch soll. Es ist perfekt für ein entspanntes Mittagessen im Freien oder ein leichtes Abendessen. Und das Beste: Es schmeckt auch kalt noch super, ideal also zum Mitnehmen oder für ein Picknick!

Ingredients (9 ingredients)

  • 200 ml lemon & parmesan vinaigrette
  • 4 piece chicken breasts
  • 2 tsp dried oregano
  • 600 g lemon orzo
  • 250 g tomatoes
  • 0.5 piece cucumber
  • 50 g olives
  • 100 g feta
  • 1 bunch leftover soft herbs

Preparation (4 steps)

Chicken Marinade Preparation

Combine 80ml of the vinaigrette with the chicken breasts and dried oregano in a bowl. Mix well to ensure the chicken is evenly coated. Cover the bowl and set aside in the fridge to marinate for at least 30 minutes or up to 2 hours.

Chicken Roasting

Preheat the oven to 200°C/180°C fan/gas 6. Arrange the marinated chicken breasts in a roasting tin. Drizzle over any leftover marinade, then cook for 20-25 minutes until the chicken is cooked through. Set aside to rest for 5-7 minutes before slicing. Toss in the roasting pan juices and set aside.

Orzo Salad Preparation

While the chicken is resting, combine the remaining vinaigrette with the orzo, tomatoes, cucumber, olives, and feta in a large bowl. Toss well to combine all ingredients and season to taste with salt and pepper.

Final Assembly

Serve the sliced chicken on top of the orzo salad and scatter over any soft herbs left over from the initial preparation of the orzo. Serve immediately or chill for later.
