Description

This rich vegetable soup with meat is a traditional dish that warms you up, especially in the cold season. I like to cook it when I need something substantial and hearty. The long cooking time is worth it because the meat becomes tender as butter and the flavor is intense. Perfect for a festive meal with the family or simply to treat yourself on a cold day. The combination of different vegetables and meats makes this soup a true taste experience. A drizzle of olive oil and grated cheese complete the dish.

Ingredients (21 ingredients)

  • 1 piece pig's trotter cut in half
  • 1 piece chicken thighs
  • 300 g beef muscle
  • 300 g sausages
  • 100 g pork rind
  • 500 g pork ribs
  • 2 piece carrots
  • 2 piece celery ribs
  • 1 piece onions
  • 2 foglie bay leaves
  • 5 grani black pepper
  • 6 l water
  • 500 g savoy cabbage
  • 500 g chard
  • 500 g escarole
  • 500 g chicory
  • 300 g turnip tops
  • water
  • fine salt
  • grated cheese
  • olive oil

Preparation (11 steps)

Prepare meat

Put 1 pig's trotter cut in half, 1 chicken thigh, 300 g beef muscle, 300 g sausages, 100 g pork rind and 500 g pork ribs in a large pot (at least 10 liters).

Add vegetables and spices

Put 2 peeled and chopped carrots, 2 celery ribs in pieces, 1 onion cut in half, 2 bay leaves and 5 black peppercorns in the pot.

Cook broth

Pour 6 l cold water into the pot and bring to a boil over medium heat. Remove foam frequently.

Simmer broth

Reduce the heat and simmer with a lid for 2-3 hours until the meat is tender. Remove foam regularly.

Remove meat and vegetables

Remove meat and vegetables from the pot and strain the broth through a sieve.

Chop meat

Let the meat cool, cut into small pieces and bone it. Set aside.

Prepare vegetables

Wash 500 g savoy cabbage, 500 g chard, 500 g escarole, 500 g chicory and 300 g turnip tops thoroughly, remove hard parts and chop coarsely.

Cook vegetables

Cook the vegetables in boiling salted water for 5-7 minutes. Drain and squeeze lightly to remove excess water.

Strain broth

Strain the broth again to remove any further impurities.

Finish soup

Bring the broth to a boil, add the meat and vegetables. Season with fine salt and cook everything together for 10-15 minutes so that the flavors combine.

Serve

Fill the soup into deep plates and serve with grated cheese and olive oil.
