Description

This rustic pizza with Mediterranean flavours is a real delight! I love preparing this recipe, especially during warm summer evenings. The combination of the crispy dough, the slightly sweet homemade tomato sauce, the caramelised onions and the spicy merguez is simply irresistible. The melting mozzarella brings a touch of sweetness that perfectly balances the flavours. This pizza is ideal for a convivial meal with family or friends. Do not hesitate to add other seasonal vegetables such as courgettes or aubergines for an even more gourmet version. A real treat!

Ingredients (16 ingredients)

  • 350 g flour
  • 100 g water
  • 1 packet baker's yeast
  • 100 g milk
  • 1 c. à s. olive oil
  • 1 pinch Salt or fine salt
  • 5 piece grated tomatoes
  • 3 piece sliced onions
  • 1 piece red bell pepper
  • 1 c. à s. tomato paste
  • 2 c. à s. icing sugar or granulated sugar
  • 2 c. à s. oil
  • 2 piece merguez
  • 150 g grated mozzarella
  • 1 pinch Salt or fine salt
  • 1 pinch Pepper

Preparation (9 steps)

Preparation of the dough

Thermomix® Setting
20 sec/Speed 3

Put 100 g of water, the sachet of yeast and 10 g of milk in the bowl. Mix 20 Sek./Stufe 3.

Addition of the dry ingredients and the oil

Add 350 g of flour, 1 tbsp of olive oil and the salt in the bowl. Mix 30 Sek./Stufe 4.

Finalisation of the dough

Add the rest of the milk (90 g). Mix 2 Min./Knetstufe. Let the dough rest for 1 hour in a warm place.

Preparation of the tomato sauce

Thermomix® Setting

Put 3 sliced onions in the bowl and chop 3 Sek./Stufe 5. Add 2 tbsp of oil and brown 3 Min./120°C/Stufe 1.

Cooking of the tomato sauce

Thermomix® Setting
20 min/212°F/Speed 2 100

Add 5 grated tomatoes, 1 tbsp of tomato paste, the salt, the pepper and 2 tbsp of sugar in the bowl. Cook 20 Min./100°C/Stufe 2, without the measuring cup, to reduce the sauce.

Caramelisation of the onions

Transfer the cooked onions in a bowl. Add 1 tbsp of sugar and mix. Set aside.

Preparation of the merguez

Cut the merguez in slices and cook them in a pan on medium heat until they are golden.

Assembly of the pizza

Preheat the oven to 200°C. Spread the pizza dough on a baking tray. Spread the tomato sauce on the dough, then arrange the merguez slices, the caramelised onions, the grated mozzarella and the red bell pepper cut in slices.

Cooking of the pizza

Bake the pizza in the preheated oven and cook for 15 to 20 minutes, or until the dough is golden and the mozzarella is melted and slightly golden.
