Description

This recipe for char with smoked salmon and creamy leeks is a real treat! I especially like to make it when I have guests, as it can be prepared well in advance and always makes an impression. The tender char, filled with aromatic smoked salmon and topped with a fine crème fraîche, harmonizes wonderfully with the creamy leek cream. The preparation is straightforward and succeeds with the Thermomix® in no time at all. Served with rice or salt potatoes, it is a light but festive dish that is perfect for special occasions or a fine dinner. An absolute favorite recipe that I always enjoy preparing!

Ingredients (8 ingredients)

  • 4 piece Char
  • 4 slice Salmon
  • 1 container Crème fraîche
  • 40 cl Liquid cream
  • 1 piece Leek(s)
  • 40 g Butter
  • to taste Sauce
  • to taste Pepper

Preparation (9 steps)

Prepare char

Clean the char and remove the middle bone. This is a preparation step and takes place outside of the Thermomix.

Fill char

Place one slice of smoked salmon in the belly of each char. This is a preparation step and takes place outside of the Thermomix.

Season and wrap char

Spread the crème fraîche on the char and season with pepper. Then wrap in aluminum foil to make packets. This is a preparation step and takes place outside of the Thermomix.

Prepare leek

Cut the leeks into rings. This is a preparation step and takes place outside of the Thermomix.

Sauté leek

Thermomix® Setting
5 min/248°F/Speed 1 120

Put 40 g of butter into the mixing bowl and melt for 3 min./120°C/speed 1. Then add the sliced leek and sauté for 5 min./120°C/speed 1.

Prepare leek cream

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 400 ml cream to the mixing bowl and simmer for 5 min./90°C/speed 2.

Thicken sauce

Thermomix® Setting
30 sec/194°F/Speed 3 90

Add some sauce binder to the mixing bowl and stir in for 30 sec./90°C/speed 3 until the desired consistency is reached.

Bake char

Preheat the oven to 180°C and bake the char in the aluminum foil packets for 10 minutes. This is a baking step and takes place outside of the Thermomix.

Arrange

Remove the char from the aluminum foil and arrange on plates. Pour the hot leek cream over it and serve with rice or salt potatoes. This is an arranging step and takes place outside of the Thermomix.
