Description

This salad with chicken and roasted chickpeas is an absolute highlight for warm days! I especially like to make it when I need something quick and still want something healthy and delicious on the table. The combination of tender chicken, crunchy lettuce, sweet tomatoes and the spicy chickpeas is simply unbeatable. The creamy dressing rounds everything off perfectly. Ideal for a light lunch or as a side dish for grilling. And the best part: it's super easy to prepare!

Ingredients (16 ingredients)

  • 300 g Chicken breast fillet
  • 1 tsp Olive oil
  • to taste Salt
  • to taste Pepper
  • to taste Sweet paprika powder
  • 3 piece Eggs
  • 100 g Chickpeas - Glass
  • 2 piece Lettuce hearts
  • 60 g Cocktail tomatoes
  • 2 tbsp Parmesan
  • 1 clove Garlic clove
  • 2 tbsp Mayonnaise
  • 4 tbsp Yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp Lemon juice
  • 0.5 tsp Worcestershire sauce

Preparation (7 steps)

Prepare chicken and chickpeas

Preheat the oven to 200 degrees top and bottom heat. Flatten the chicken breast fillets slightly and brush with 1 tsp olive oil. Wash the chickpeas from the jar and also brush with a little olive oil. Place the chicken and chickpeas in a baking dish and season well with salt, pepper and paprika powder.

Bake chicken and chickpeas

Bake the baking dish with the chicken and chickpeas in the preheated oven for 20 minutes on the middle rack.

Cook eggs

Thermomix® Setting
18 min/Varoma/Speed 1 Varoma

Put 500 ml water into the mixing bowl. Insert the steamer basket and place 3 eggs in it. Cook for 18 min./Varoma/speed 1. Then quench the eggs in cold water, peel and halve.

Prepare lettuce and tomatoes

Cut the 2 lettuce hearts into small pieces and quarter the 60g cocktail tomatoes.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Put 1 clove of garlic into the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add 2 tbsp mayonnaise, 4 tbsp yogurt, 1 tsp Dijon mustard, 1 tbsp lemon juice, 1/2 tsp Worcestershire sauce and 2 tbsp Parmesan to the chopped garlic in the mixing bowl and stir for 10 sec./speed 3.

Arrange salad

Arrange the salad with the roasted chickpeas, the tomatoes, the halved eggs and the chicken on plates and drizzle with the dressing.
