Description

This sauerkraut dish from the sea is a comforting delight, perfect for autumn and winter evenings. I love preparing this recipe, as it is both simple and festive. The salmon and halibut, with their delicate flesh, go wonderfully with the acidity of the sauerkraut. The pink prawns bring a touch of sweetness and color. The potatoes complete the dish by providing a melting texture. A complete and tasty dish, ideal for a festive meal or a dinner with friends. Feel free to add other seafood according to your desires!

Ingredients (11 ingredients)

  • 400 g Salmon paving stone(s)
  • 400 g Halibut
  • 12 piece Pink prawns
  • 1 kg Sauerkraut(s)
  • 4 piece Clove(s)
  • 0.5 c. à café Peppercorns
  • 6 piece Potato(es)
  • 40 c White wine
  • 1 c. à soupe Cumin
  • 2 c. à soupe Oil
  • Salt

Preparation of the sauerkraut

Thermomix® Setting
30 min/194°F/Speed 1/Linkslauf 90 Reverse

Put the sauerkraut in the Thermomix bowl. Add the pink prawns, cloves and peppercorns. Pour in the white wine. Heat everything for 30 min/90°C/Stufe 1/Linkslauf.

Cooking the fish

Remove the skin from the salmon paving stones and cut them into portions. Also cut the halibut fillets into portions. Heat the oil in a pan. Put the salmon paving stones in the pan and cook them over medium heat for 5 minutes on one side. Then turn them over and continue cooking for 5 minutes.

Plating and serving

Distribute the sauerkraut and prawns on the plates. Add the salmon paving stones and potatoes. Salt and pepper everything. Sprinkle with cumin. Serve immediately.
