About this recipe

These Chocolate Banana Brownies are a recipe I've adapted and perfected over the years, inspired by my grandmother's love for both chocolate and using up overripe bananas. She always had a batch of banana bread or muffins on hand, and I wanted to create something with a similar comforting vibe, but with a richer, more decadent twist. The beauty of this recipe lies in the interplay of flavors and textures. The dark chocolate chips provide a deep, bittersweet foundation, while the butter adds richness and moisture. The ripe bananas are crucial; they not only contribute sweetness but also create a wonderfully fudgy texture. Don't be tempted to use underripe bananas, as they won't provide the same level of moisture or banana flavor. The vanilla extract enhances the overall sweetness and adds a subtle aromatic note. The all-purpose flour provides structure, while the sugar balances the bitterness of the chocolate. The cocoa powder intensifies the chocolate flavor, and the baking powder ensures the brownies have a slight lift, preventing them from becoming too dense. When using the Thermomix®, it's important to scrape down the sides of the bowl after each mixing step to ensure all ingredients are evenly incorporated. For melting the chocolate and butter, keep a close eye on the mixture and adjust the time as needed, depending on the strength of your Thermomix®. You want the chocolate to be melted and smooth, but not burnt. When pureeing the bananas, you can adjust the speed and time to achieve your desired consistency. Some people prefer a completely smooth puree, while others like a few small chunks of banana for added texture. Be careful not to overmix the batter, as this can result in tough brownies. For variations, you can easily adapt this recipe to be vegetarian by ensuring your chocolate chips are vegetarian-friendly. For a vegan version, you can substitute the butter with a vegan butter alternative and the eggs with a flax egg (1 tablespoon of ground flaxseed mixed with 3 tablespoons of water, let sit for 5 minutes to thicken). You could also add a pinch of cinnamon or nutmeg to the batter for a warmer, spicier flavor. Chopped walnuts or pecans would also be a delicious addition. These brownies are best served warm, either on their own or with a scoop of vanilla ice cream or a dollop of whipped cream. A dusting of cocoa powder or a drizzle of chocolate sauce would also be a nice touch. They pair perfectly with a cup of coffee or a glass of milk. To store, keep the brownies in an airtight container at room temperature for up to 3 days. They can also be frozen for longer storage. To prepare ahead of time, you can make the batter a day in advance and store it in the refrigerator. Just be sure to bring it to room temperature before baking. You can also bake the brownies a day ahead and store them in an airtight container until ready to serve.
