Description

This comforting vegan ramen soup is a dish full of flavor and textures, perfect for cold days. The base of vegetable broth, soy milk and miso combines with the spicy touch of gochujang to create an unforgettable culinary experience. I love adding golden tofu and shiitake mushrooms to give it an extra touch of umami. Ingredients (18 ingredients)

  • 1 piece carrot
  • 1 cabeza scallion or chinese onion
  • 200 gramos spinach
  • 200 gramos shiitake mushrooms or mushrooms
  • 200 gramos golden tofu
  • 100 gramos rice noodles
  • 2 dientes garlics
  • 1 trozo ginger
  • 1 tbsp miso
  • 1 litro vegetable broth
  • 1 tsp salt
  • 2 cdas rice vinegar or sake
  • 1 chorro sweet soy sauce
  • shelled corn
  • 1 puñado sesame seeds
  • 1 tsp vegan dashi powder
  • 1 cup soy milk
  • 1 tbsp gochujang

Prepare garlic, ginger and scallion

Peel 2 cloves of garlic and a piece of ginger. Cut the white part of 1 head of scallion. If preferred, finely chop the green part and reserve it to decorate at the end. Place the garlic, ginger and the white part of the scallion in the bowl and crush 3 Sec./Level 7.

Sauté the spices

Add 2 tbsp of sesame oil, 1 tsp of vegan dashi powder to the bowl and sauté 3 Min./120°C/Level 1.

Incorporate miso and gochujang

Add 1 tbsp of miso or a miso packet and 1 tbsp of gochujang to the bowl. Mix 10 Sec./Level 3.

Grind sesame seeds

Lightly toast 1 handful of sesame seeds in a pan. Add the toasted seeds to the bowl and grind 5 Sec./Level 8.

Add soy sauce and rice vinegar

Add 1 dash of sweet soy sauce and 2 tbsp of rice vinegar or sake to the bowl. Mix 5 Sec./Level 3.

Pour broth and soy milk

Add 1 liter of vegetable broth and 1 cup of soy milk to the bowl. Cook 15 Min./100°C/Level 2.

Add vegetables

Add 1 sliced carrot, 200 grams of spinach and 200 grams of shiitake mushrooms or mushrooms to the bowl. Add 1 tsp of salt. Cook 5 Min./100°C/Level 1.

Cook rice noodles

In a separate pot, cook 100 grams of rice noodles according to package instructions. Drain completely.

Serve the ramen

Place the noodles in a deep dish and pour the hot broth over them.

Add toppings

Add the cooked vegetables, 200 grams of golden tofu, shelled corn q/s and the green part of the chinese onion reserved at the beginning to the dish.

Sprinkle sesame

Sprinkle sesame on top and serve immediately.
