Description

With the Thermomix®, classic Viennese rascal cookies are made in no time at all. Butter, icing sugar, egg and flour are processed into a fine dough and filled with jam. The recipe is ideal for Christmas baking or festive occasions. The preparation time is 110 minutes, of which 50 minutes is active working time, and yields about 25 cookies. Perfect as finger food or sweet dessert for the whole family.

Ingredients (9 ingredients)

  • 125 g Butter, cold
  • 100 g Icing sugar
  • 2 Stück Pulp of vanilla pods
  • 1 Prise Salt
  • 1 Stück Egg, size M
  • 200 g Flour, Type 405
  • 1 TL Baking powder
  • 100 g Jam, e.g. apricot, raspberry, etc.
  • 1 Päckchen Icing sugar for dusting

Preparation (7 steps)

Prepare dough

Put butter, icing sugar, pulp of vanilla pods, salt and egg in the mixing bowl and mix for 30 sec./speed 4.

Cool dough

Place the dough on a floured work surface, form into a ball, wrap in cling film and chill for one hour.

Roll out and cut out dough

Then roll out the dough in portions between two layers of cling film to about 3 mm thick. Cut out cookies with the cookie cutter. Cut small stars or fir trees out of the middle of half of the cookies. Place the dough pieces on a baking sheet lined with baking paper and chill for about 1 hour.

Preheat oven

Preheat oven to 175°C top/bottom heat.

Bake cookies

Bake the cookies light yellow for 10-12 minutes. Remove and let cool.

Prepare jam and assemble cookies

Heat the jam and strain through a sieve. Spread the cookies without a motif with it and place the remaining cookies on top. Dust with icing sugar.
