Description

Prepare juicy sous-vide beef sirloin steaks with the Thermomix®. This high-protein main course with beef sirloin steaks, oil, salt and pepper is ideal for festive occasions and lovers of hearty cuisine. Preparation in the Thermomix® takes a total of 150 minutes, with the active working time only about 20 minutes. The recipe is designed for [Anzahl] servings.   • Sunflower oil
  • Salt
  • Pepper

Preparing the Steaks

Remove the beef sirloin steaks from the refrigerator 30 minutes before preparation and let them rest at room temperature.

Prepare steaks

Rinse the beef sirloin steaks under cold running water and pat dry, then vacuum-seal the sirloin steaks individually. Alternatively, place the sirloin steaks in freezer bags. Place freezer bags with the opening facing up in water and squeeze out all the air, then close tightly with clamps.

Heat water

Insert the cooking basket into the mixing bowl and fill the mixing bowl with hot water to just below the edge of the cooking basket. Close the mixing bowl and heat the water with the measuring cup in place for 20 minutes/60 °C/speed 1.

Add Steaks

Place the vacuum-sealed sirloin steaks in the cooking basket and press lightly into the water until they are completely covered with water. Sirloin steaks in freezer bags should be placed in the cooking basket so that the bag opening with the clamps points upwards. If necessary, add a little more hot water, but observe the maximum filling height of the mixing bowl.

Cook Steaks (Medium Rare to Medium)

Now cook the beef sirloin steaks with the measuring cup in place for 1 hour/55 °C/speed 1 for a medium rare to medium (clearly pink) result.

Cook Steaks (Medium to Well Done)

1 Stunde/140°F/Speed 1 140°F

Alternatively: Now cook the beef sirloin steaks with the measuring cup in place for 1 hour/60 °C/speed 1 for a medium to well done (slightly pink) result.

Sear Steaks

Preheat a pan on the stove over high heat, then add the sunflower oil. Remove the beef sirloin steaks from the bags, pat dry thoroughly with kitchen paper and fry in the hot pan for 30 seconds on each side.

Season and Serve

Remove from the pan, season with salt and pepper on both sides and serve immediately.
