Description

This sweet rice cake, also known as butter mochi, is a delightful treat that's surprisingly easy to make. I've been making this recipe for potlucks and gatherings for years, and it's always a hit! The combination of sweet rice flour, coconut milk, and evaporated milk creates a unique texture that's both chewy and tender. A hint of cinnamon adds a warm, comforting touch. It's perfect for a simple dessert or a sweet snack any time of day. Plus, it's naturally gluten-free!

Ingredients (9 ingredients)

  • 454 g sweet rice flour
  • 400 g white sugar
  • 2 tsp baking powder
  • 0.25 tsp ground cinnamon (Optional)
  • 3 piece eggs
  • 2 tsp vanilla extract
  • 397 g coconut milk
  • 355 ml evaporated milk
  • 113 g unsalted butter, melted and cooled

Preparation (6 steps)

Preheat oven and prepare baking pan

Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch pan. This step is done outside of the Thermomix.

Combine dry ingredients

Add 454g sweet rice flour, 400g white sugar, and 2 tsp baking powder, and ¼ tsp ground cinnamon (optional) to the mixing bowl. Mix for 10 Sec./Stufe 3 to combine.

Combine wet ingredients

Thermomix® Setting
10 sec/Speed 4

Add 3 eggs and 2 tsp vanilla extract to the mixing bowl. Mix for 10 Sec./Stufe 4 to combine.

Add milk and butter

Thermomix® Setting
10 sec/Speed 3

Add 397g coconut milk and 355ml evaporated milk to the mixing bowl. Mix for 10 Sec./Stufe 3. Add 113g melted and cooled unsalted butter and mix for 10 Sec./Stufe 3.

Pour batter into pan

Pour batter into the greased pan. Tap pan on a flat work surface to settle the batter. This step is done outside of the Thermomix.

Bake

Bake in the preheated oven until top is golden brown, about 50 minutes. Let cool before slicing, about 30 minutes. This step is done outside of the Thermomix.
