Description

This hearty wild boar sausage cake is a savory dish, ideal for special occasions or as a main course.   • 1000 g Wild boar sausage
  • 250 g Onions
  • 2 Stück Cloves of garlic
  • 40 g Clarified butter
  • 2 EL Medium-hot mustard
  • 1 EL Marjoram
  • 500 g Wheat flour Type 405
  • 1 Stück Cube fresh yeast
  • 1 TL Sugar
  • 1 TL Salt
  • 1 Stück Egg
  • 250 ml Lukewarm milk

Preparation (11 steps)

Chop onions and garlic

Thermomix® Setting

Put 250g onions into the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7.

Sauté onions and garlic

Add 40g clarified butter to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare wild boar sausage

Remove the skin from 1 kg of wild boar sausage and put the sausage meat in a bowl.

Fry wild boar sausage

Fry the wild boar sausage meat in a separate pan until crumbly.

Add wild boar sausage, mustard and marjoram

Add the fried wild boar sausage meat, 2 tablespoons of medium-hot mustard and 1 tablespoon of marjoram to the onions and garlic in the mixing bowl and mix for 20 sec./reverse/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Put 500g wheat flour Type 405, 1 cube of fresh yeast, 1 teaspoon of sugar, 1 teaspoon of salt, 1 egg and 250 ml of lukewarm milk into the mixing bowl and process into a dough for 3 min./kneading stage.

Let the dough rise

Place the dough in a bowl and let it rise in a warm place for about 60 minutes until it has doubled in size.

Roll out the cake base

Roll out the dough on a floured work surface and form a cake base (approx. 26 cm diameter). Place the base in a greased springform pan.

Add filling to the cake base

Spread the wild boar sausage mixture evenly on the cake base.

Bake cake

Bake the cake in a preheated oven at 180°C top/bottom heat for approx. 45 minutes.

Serve cake

Remove the wild boar sausage cake from the oven, let it cool briefly and serve.
