Description

These mushroom and apple wraps are a delicious and healthy option for a quick meal or an original snack. The combination of sautéed mushrooms with the sweetness of the apple and the creamy touch of tahini is simply irresistible. I often prepare them for a light lunch or an informal dinner with friends. They are very easy to make and can be adapted to your tastes, adding other vegetables or spices. Go ahead and try them, you will love them! Also, they are an excellent vegetarian and gluten-free option.

Ingredients (13 ingredients)

  • 400 gramos Assorted mushrooms
  • 4 Tallos Cleaned celery
  • 0.5 piece Red apple
  • 1 clove Garlic
  • 2 cucharadas soperas Olive oil
  • 3 cucharadas soperas Chickpeas
  • 1 cucharada sopera Tahini
  • to taste Modena vinegar
  • to taste Salt
  • to taste Pepper
  • to taste Sweet paprika
  • to taste Chives
  • 4 piece Corn tortillas

Preparation (7 steps)

Celery preparation

Wash and cut the 4 celery stalks into pieces of approximately 1 cm. Place in the Thermomix glass and crush for 3 Sec./Stufe 4.

Sautéed celery, garlic and apple

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 2 tablespoons of olive oil, ½ red apple cut into small cubes and 1 minced garlic clove to the glass. Sauté for 5 Min./120°C/Stufe 1.

Mushroom incorporation

Thermomix® Setting
8 min/Varoma/Speed 1 Varoma Reverse

Add 400 grams of assorted mushrooms cut into strips to the glass. Cook for 8 Min./Varoma/Stufe 1, with left turn.

Add chickpeas and tahini

Thermomix® Setting
2 min/194°F/Speed 1 90 Reverse

Add 3 tablespoons of cooked chickpeas, 1 tablespoon of tahini and a splash of Modena vinegar to the glass. Mix for 2 Min./90°C/Stufe 1, with left turn.

Season and cool

Thermomix® Setting
10 Seg./Speed 2

Add 1 pinch of salt, 1 pinch of pepper, 1 pinch of sweet paprika and 1 pinch of chopped chives to the glass. Mix for 10 Sec./Stufe 2. Remove from the glass and let cool at room temperature.

Heat tortillas

Heat the 4 corn tortillas in the microwave for 1 minute or in a pan.

Fill and roll up

Fill each tortilla with a generous portion of the mushroom preparation. Fold the bottom part upwards, covering the filling. Fold the ends inwards and roll up.
