Description

This strawberry cake without baking is a refreshing treat for the summer. With a crunchy cookie base and a creamy cream cheese filling, topped with fresh strawberries, it is easy to prepare and ideal for birthdays or as a dessert. Preparation takes about 30 minutes, cooling time is at least one hour. The recipe is designed for 12 servings.

  • 250 g Butter Biscuits
  • 125 g Butter
  • 500 g Cream Cheese
  • 250 g Quark
  • 150 g Sugar
  • 1 packet Vanilla Sugar
  • 200 g Whipping Cream
  • 500 g Strawberries

Chop biscuit base

Put 250 g butter biscuits into the mixing bowl and chop for 8 sec./level 8. If necessary, push down with the spatula and repeat the process until the biscuits are finely chopped.

Melt butter

Put 125 g butter in pieces into the mixing bowl and melt for 3 min./50°C/level 2.

Mix biscuit crumbs and butter

Thermomix® Setting

Add the chopped butter biscuits from step 1 to the melted butter in the mixing bowl and mix for 15 sec./level 3.

Press biscuit base into shape

Put the biscuit-butter mixture into a springform pan (26 cm diameter) and press firmly with a spoon or your hands. Place the base in the refrigerator for about 30 minutes.

Prepare cream cheese cream

Put 500 g cream cheese, 250 g quark, 150 g sugar and 1 packet of vanilla sugar into the mixing bowl and stir for 30 sec./level 4.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Put 200 g whipping cream into the mixing bowl and whip until stiff with the butterfly for 2 min./level 3.5. The cream should not be whipped for too long so that it does not turn into butter.

Fold in cream

Carefully fold the stiffly whipped cream into the cream cheese cream in the mixing bowl using a spatula. Do not stir with the Thermomix.

Prepare strawberries

Wash, clean and halve or quarter 500 g strawberries, depending on their size.

Fill cake

Spread half of the cream cheese cream on the biscuit base. Spread half of the strawberries on top. Add the remaining cream and smooth it out. Top with the remaining strawberries.

Cool cake

Place the cake in the refrigerator for at least 1 hour, or better longer.
