About this recipe

Ah, Sicilian spaghetti with tomato and almonds! This dish reminds me of summers spent in Sicily, where simple and authentic flavors reign supreme. My grandmother, originally from Catania, often prepared this dish with sun-drenched tomatoes from her garden. It is a tribute to her generous and flavorful cuisine. Each ingredient plays a crucial role in this dish. Tomatoes, ripe and juicy, are the basis of the sauce. They bring a natural sweetness and a refreshing acidity. Fresh basil, with its fragrant leaves, adds a herbaceous and slightly peppery note. Garlic, meanwhile, enhances the taste of the whole and brings an aromatic depth. Almond powder is the secret ingredient that gives the sauce a creamy texture and a subtly nutty taste. Finally, grated parmesan brings a salty and umami touch, as well as a slightly grainy texture that contrasts nicely with the smooth sauce. For the preparation with Thermomix®, it is important to choose quality tomatoes. If possible, opt for Italian tomatoes such as San Marzano or Roma, which are particularly tasty. Feel free to adjust the seasoning to your liking. A pinch of sugar can help balance the acidity of the tomatoes if they are a little too acidic. When incorporating the almonds and parmesan, be careful not to mix the sauce too much, in order to maintain a slightly grainy texture. The Linkslauf (reverse direction) is essential to avoid chopping the ingredients. While the sauce is preparing, cook the spaghetti 'al dente' in a large saucepan of salted boiling water. This is crucial for a perfect texture. For a vegan version, you can replace the parmesan with nutritional yeast, which brings a similar cheesy taste. You can also add grilled vegetables such as eggplants or zucchini for a more substantial version. For a spicier touch, add a pinch of Espelette pepper or a few red pepper flakes to the sauce. Serve the Sicilian spaghetti hot, sprinkled with grated parmesan and a few fresh basil leaves. A crisp green salad with a light vinaigrette is an excellent option to accompany this dish. A glass of dry and fruity white wine, such as a Sicilian Grillo, will perfectly complement the meal. If you have leftovers, you can store them in the refrigerator in an airtight container for 2 to 3 days. Reheat them gently in a pan or microwave before serving. You can also prepare the sauce in advance and store it in the refrigerator for 24 hours. Then just cook the spaghetti and mix everything together just before serving.
