Description

This chicken recipe is a delightful combination of savory and sweet. Tender chicken breasts are cooked in a creamy mushroom and apple sauce, creating a comforting and flavorful dish. I've been making this for years, and it's always a hit! The apple juice and lemon juice add a bright, tangy note that perfectly complements the earthy mushrooms. Ingredients (12 ingredients)

  • 4 piece skinless, boneless chicken breasts
  • 0.25 cup all-purpose flour
  • 0.5 tsp salt
  • ground black pepper
  • 1 tbsp olive oil
  • 1.5 tsp butter
  • 4 piece green onions, chopped
  • 0.5 cup sliced fresh mushrooms
  • 1 clove garlic, finely minced
  • 0.33333333333333 cup unsweetened apple juice
  • 2 tbsp lemon juice
  • 1 tsp white sugar

Preparation (7 steps)

Prepare Chicken Breasts

Place chicken breasts between two sheets of heavy plastic on a solid, level surface. Firmly pound chicken breasts with the smooth side of a meat mallet to about ½-inch thickness. Cut flattened breasts into several large pieces. Set aside.

Prepare Flour Mixture

Place ¼ cup all-purpose flour, ½ teaspoon salt, and ground black pepper to taste into a resealable plastic bag, add chicken pieces. Shake gently until chicken thoroughly coated with flour mixture. Set aside.

Preheat Oven

Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch baking dish. Set aside.

Sauté Green Onions, Mushrooms, and Garlic

Add 4 chopped green onions, ½ cup sliced fresh mushrooms, and 1 finely minced clove garlic to the mixing bowl. Chop for 3 seconds/speed 5. Scrape down the sides of the bowl with a spatula.

Sauté Vegetables with Oil and Butter

Add 1 tablespoon olive oil and 1 ½ teaspoons butter to the mixing bowl with the chopped vegetables. Sauté for 5 minutes/120°C/speed 1.

Prepare Sauce

Add ⅓ cup unsweetened apple juice, 2 tablespoons lemon juice, and 1 teaspoon white sugar to the mixing bowl. Cook for 3 minutes/100°C/speed 2.

Assemble and Bake

Heat olive oil and butter in a large skillet over medium heat. Add chicken; cook until golden brown on each side, about 5 minutes per side. Place in the prepared baking dish, leaving oil and butter in the skillet. Spread mushroom mixture over chicken pieces. Pour sauce over chicken and mushroom mixture; cover dish. Bake in the preheated oven until sauce has reduced and chicken has absorbed the sauce, about 1 hour.
