Description

These lemon flavored macaroons are a real treat! I love preparing this recipe for afternoon tea or for a special occasion. The combination of almond and lemon is just perfect, and the lemon cream brings a tangy touch that balances everything. The preparation requires a little patience, especially for the crusting time, but the result is really worth it. These macaroons are perfect to accompany a tea or coffee, and they will always be a sensation with your guests. Feel free to vary the colors for an even more festive presentation!

Ingredients (13 ingredients)

  • 3 piece egg whites
  • 25 g powdered sugar or caster sugar
  • 1 Goutte lemon juice
  • 1 pinch salt or fine salt
  • 20 Gouttes yellow food coloring
  • 225 g icing sugar
  • 125 g almond powder
  • 1 zeste lemon
  • 15 cl lemon juice
  • 1 oeuf egg
  • 75 g powdered sugar or caster sugar
  • 1 c. à s. cornstarch
  • 40 g butter

Preparation of dry ingredients

20 sec/Speed 10

Mix 225 g of icing sugar, 125 g of almond powder and 1 lemon zest in the Thermomix bowl. Mix finely for 20 Sek./Stufe 10.

Sifting the powders

Sift the mixture of icing sugar, almond powder and lemon zest into a salad bowl. Set aside.

Whipping the egg whites

3 min/Speed 3.5

Insert the whisk. Put 3 egg whites, 25 g of powdered sugar or caster sugar, a drop of lemon juice and 1 pinch of salt or fine salt in the Thermomix bowl. Whisk the egg whites until stiff for 3 Min./Stufe 3.5.

Coloring the egg whites

Thermomix® Setting
10 sec/Speed 2

Add 20 drops of yellow food coloring to the egg whites and mix gently with the whisk for 10 Sek./Stufe 2.

Macaronage

Pour the sifted almond powder and icing sugar all at once over the egg whites. Incorporate gently with a spatula (Maryse).

Piping the macaroons

Fill a pastry bag with the preparation. Cover a baking sheet with parchment paper. Form small piles of about 3 cm in diameter on the plate.

Crusting

Let the macaroons sit (crust) for 1 hour at room temperature.

Baking the macaroons

Preheat the oven to 150°C. Bake the macaroons for 12 minutes.

Preparation of the lemon cream

5 min/212°F/Speed 1 100

Put 15 cl of lemon juice and 1 lemon zest in the Thermomix bowl. Boil for 5 Min./100°C/Stufe 1.

Egg-sugar-starch mixture

In the meantime, mix 1 egg, 75 g of powdered sugar or caster sugar and 1 tbsp of cornstarch in a salad bowl.

Cooking the lemon cream

5 min/176°F/Speed 2 80

Pour the boiling lemon over the egg-sugar-starch mixture. Mix. Put everything back into the Thermomix bowl and cook for 5 Min./80°C/Stufe 2 until thickened.

Finalizing the lemon cream

Thermomix® Setting
30 sec/Speed 4

Once the cream is lukewarm, add 40 g of softened butter and whisk vigorously with the Thermomix for 30 Sek./Stufe 4 to obtain a smooth paste.

Filling the macaroons

Put lemon cream on half of the macaroons. Arrange the macaroons 2 by 2 according to their size and then glue them together.
