Description

This wild boar roast in balsamic fruit sauce is a hearty and festive dish that is especially good in the cold season. I like to make it when guests come because it can be prepared well in advance. The wild boar meat becomes wonderfully tender and the sauce gets a fine sweetness and acidity from the balsamic vinegar and forest fruit jam. The juniper berries and bay leaves give the roast a spicy note. A real treat that makes a good impression on any festive table! If you like, you can marinate the roast in orange juice beforehand.

Ingredients (10 ingredients)

  • 1000 g Wild boar roast
  • Salt
  • Pepper
  • 1 Stück Onion(s)
  • Juniper berry(ies)
  • 30 g Tomato paste
  • Bay leaves
  • 0.25 Liter Red wine, dry
  • 0.13 Liter Balsamic vinegar
  • 60 g Jam, forest fruit jam

Preparation (4 steps)

Chop onion

Peel and quarter the onion and place in the mixing bowl. Chop for 3 seconds/level 5.

Sauté onions

Leave the chopped onions in the mixing bowl. Do not add any other ingredients. Sauté for 3 minutes/120°C/level 1.

Braise roast

60 min/212°F/Speed 1 100 Reverse

Sear the wild boar roast in a pan with some oil on all sides and season with salt and pepper. Add the seared roast, juniper berries, tomato paste, bay leaves, red wine and balsamic vinegar to the onions in the mixing bowl. Simmer for 60 minutes/100°C/level 1/reverse. Baste the roast with the liquid from the mixing bowl every 15 minutes.

Prepare sauce

5 min/212°F/Speed 2 100

Remove the roast from the mixing bowl and keep warm. Add the forest fruit jam to the mixing bowl and bring to a boil for 5 minutes/100°C/level 2. Season with salt and pepper and thicken with a little cornstarch if necessary (approx. 10 sec./level 4).
