Description

These breakfast muffins with bacon and cheese are a savory finger food that's ideal for brunch. Preparation is quick and easy, making them perfect for students or anyone who loves a hearty breakfast. The muffins are high in protein and filling, ideal for a good start to the day. The preparation time is about 25 minutes and yields one serving.

Ingredients (8 ingredients)

  • Oil for frying
  • 300 g Bacon
  • 6 Stück Small eggs
  • Italian herbs, (dried or fresh)
  • Salt
  • Pepper
  • Cheddar cheese (or other cheese of your choice, grated)
  • Oil (for the muffin tins)

Preparation (7 steps)

Prepare bacon

Add a little oil to a pan and briefly heat 300g of bacon over medium heat on both sides. Remove the bacon from the pan after 2-3 minutes and place on paper towels. It should still be flexible and rather raw.

Prepare muffin tins

Brush muffin tins with a little oil.

Line muffin tins

Line the oiled muffin tins with the bacon.

Season eggs

Place 6 small eggs in the mixing bowl, season with salt, pepper and Italian herbs and mix for 10 sec./Stufe 3.

Pour eggs into muffin tins

Pour the seasoned eggs into the bacon-lined muffin tins.

Add cheese

Add some grated cheddar cheese over the eggs.

Bake

Place the tray in the preheated oven at 200 - 220 °C top/bottom heat and bake for about 11-15 minutes until the eggs have reached the desired consistency.
