Description

This aromatic Thai broth is a versatile base for soups and sauces. Lemongrass, kaffir lime leaves, and fish sauce give it its typical Asian flavor. Preparation in the Thermomix® takes about 70 minutes and yields a larger quantity that freezes well. Ideal for lovers of Asian cuisine and perfect for cooking in advance.

Ingredients (8 ingredients)

  • 2 Stängel Lemongrass
  • 0.5 Bund Thai chives
  • 4 Stück Kaffir lime leaves
  • 1 Stück Garlic clove
  • 1 Stängel Celery
  • 1.5 l Water
  • 5 EL Light soy sauce
  • 5 EL Fish sauce

Preparation (6 steps)

Prepare lemongrass

Cut the lemongrass into fine rings or lightly pound with a meat tenderizer.

Prepare garlic

Peel a large clove of garlic and flatten it with a knife.

Prepare celery

Wash a stalk of celery and cut into coarse pieces.

Prepare broth

Put the sliced lemongrass rings, the flattened garlic clove, the coarse celery pieces, half a bunch of Thai chives, four kaffir lime leaves, 1.5 l of water, 5 tbsp of light soy sauce and 5 tbsp of fish sauce into the mixing bowl.

Simmer

Close the mixing bowl and insert the measuring cup. Gently simmer the broth for 45 minutes at 100°C on speed 1.

Strain broth

After cooking, strain the broth through a fine sieve to remove the solids. Use the finished broth as desired.
