Description

This chicken in dough baskets is a real eye-catcher and tastes great to the whole family! I like to make it on the weekend when we want something special on the table. The chicken is baked in a delicious breading and served in homemade dough baskets. The preparation takes a little while, but it's definitely worth it. The dough baskets are crispy and the chicken is juicy - a perfect combination! It goes well with a fresh salad or a creamy sauce. An absolute favorite recipe that I always enjoy preparing.

Ingredients (14 ingredients)

  • 1.5 kilogramos Chicken, cut into pieces
  • 2 vasos Milk
  • 3 dientes Garlic cloves
  • 1 Limón Lemon
  • 0.25 container Wheat flour
  • 0.25 container Breadcrumbs
  • 1 cucharadita Paprika powder, sweet
  • 0.5 cucharadita Black pepper, ground
  • 1 pinch Salt
  • 200 gramos Wheat flour
  • 100 gramos Butter, cold
  • 1 Yema de huevo Egg yolk
  • 1 pinch Salt
  • 4 cucharadas soperas Water

Preparation (12 steps)

Prepare chicken

Cut the chicken into pieces and remove any excess fat. Rub the chicken pieces with lemon juice, wash and drain well.

Marinate chicken

Place the chicken pieces in a bowl and pour the milk over them. Let it sit for 30 minutes, then drain and drain well.

Chop garlic

Place 3 garlic cloves in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Mix breading

Place the chopped garlic, flour, breadcrumbs, paprika powder, pepper and salt in a plastic bag and mix well.

Bread chicken

Put the chicken pieces in the bag and shake well until they are completely covered with the breading.

Bake chicken

Line a baking sheet with baking paper and spread the breaded chicken pieces on it. Bake in a preheated oven at 200-250°C for about 45 minutes, turning occasionally, until golden brown.

Prepare dough for the baskets

Put flour and salt in the mixing bowl and mix for 5 sec./speed 4.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Add the cold butter in pieces, egg yolk and water and knead for 2 min./kneading speed to form a smooth dough. Add a little more water if necessary.

Let dough rest

Form the dough into a ball, wrap in cling film and let it rest in the refrigerator for 30 minutes.

Roll out and shape dough

Roll out the dough on a floured work surface to about 2-3 mm thick and cut out circles with a diameter of about 15 cm. Place the dough circles in an ovenproof dish and form into small nests.

Bake dough baskets

Brush the dough baskets with egg yolk and bake in a preheated oven at 180°C for about 20 minutes until golden brown.

Serve

Fill the baked chicken pieces into the dough baskets and serve hot.
